Green Brinjal Bajji / Bharta with Raw Tomato.




Gula ani harvo tomato ghalnu bajji.

Roast one big Gula on Gas burner....... i used the green variety( you can use the purple one too) Micro Wave(4-5mins) or pressure cook to one whistle 2-3 whole green (unripe) tomatoes. Remove the skin of of both brinjal & tomatoes. But in a bowl & mash with masher or hands well (do not use mixer). Add salt, green chillies. For seasoning... Heat 2tblsp oil add rai then hing pd. & curry leaves. Add to the Brinjal. Mix well. Serve immediately. Some like this served with finely chopped onions on top. If you do not like the mess on stove of the gula when roasting........ you can chop it to big chunks with skin & pressure cook both gula & tomatoes together & then skin them. i do this sometimes when i am in doubt of the gula having worms especially the black ones.
