Nuchi/Podnichi Bhaat/Seasoned rice with lots of coconut.
This is usually prepared with left over rice...but coz. i simply love it i prepare it out of fresh rice.
Heat 2-3 tsp of oil / ghee in a thick bottomed kadai, when hot add 1 tsp urad dal, when colour changes slightly add ¼ tsp methi seeds, 1 tsp jeera then add in 1tsp of rai (sasam), when they splutter add 2-3 green chillies and 2-3 red chillies cut into pieces, 8-10 whole or a bit crushed black pepper (Optional), 10-12 curry leaves, ½ tsp of hing powder. Lower the heat and add in 4-5 cups of cooked rice (you can use left over rice for this dish), 1 cup of fresh grated coconut, salt to taste and mix well. Cover and let cook on slow heat for 10-15 minutes. Keep stirring in between. Remove and serve hot for breakfast or packed lunch.
** This dish was initially prepared when there was left over rice. You can prepare it with left over rice or freshly cooked rice.
** You can use coconut oil for tempering, there is definitely a difference in taste.
