** Note : The version here is re-edited, but the recipe remain exactly the same.
** Sipping on Ice candy / Popsicle has always been my favorite time pass during summer all through my childhood. If nothing was available, I just asked Mom to prepare some lime juice for me which I then poured into a small glass with a small spoon inserted in and kept it in the freezer making my own sweet Ice Candy. Whatever juice was offered to me I had the habit of putting it in the freezer and sipping it on later. Mumbai heat during summer and also in the month of October is really dangerous, one has to keep hydrating themselves to avoid dizziness. It’s the time of fruit juices and Ice candies for me whenever the heat levels rise up. This time I had lots of Mosambi at home which was prasadam offering of Navratri. So, as usual I prepared the juice, savored some chilled juice and put the rest in the freezer after adding on some lime and soaked sabja and flavorings to prepare Popsicle. Sabja is also good for acidity, and also to balance the heat from within the body. Lime as you all know is full of Vitamin C and is great to add on the lost nutrients from the body in form of sweat due to heat. In all, I would call this a delicious~thirst quencher sort of candy, that I love sipping on and have been enjoying it now for over 20 years. Do try this one out and relish it to beat the heat with your family and friends. Children are sure to love sipping on them, and what else way is better to ensure that they get the best homemade fruit candies than these.
** Here is the simple Method of preparing these delicious thirst quenchers “Mosambi~Lime Popsicle / Ice Candy” …
** To one full cup, say about 200 ml of freshly squeezed mosambi juice add the juice of freshly squeezed one lime and 4-5 tblsp of sugar, 1 tblsp of honey, few strands of saffron, a pinch of cardamom for flavor and mix well.
** Soak 1 tblsp of sabja in ½ - 1 cup of water for 30 minutes. They usually swell within that time and become large in size. Mix it once in between if necessary and check if more water is need, if so add in some tablespoon of water and mix well and keep it aside till done.
** Mix both the prepared juice and the soaked sabja together till well mixed. Now gently spoon in the mixture into the Popsicle / Ice candy molds taking care to see that you have added on the sabja too as it sometimes stays on top. Put this in the freezer for 4-6 hours or till well set. I usually keep it overnight.
** “Mosambi~Lime Popsicle / Ice Candy” are done and ready to be served. Gently rub the mold in between both your hand palms rolling them, it will loosen the candy from within, remove and serve immediately. You can also gently hold it under running water taking care to see that the water passes only on the outside of mold portion, within seconds the candy within gets loosened.
** Enjoy these Popsicle that are healthier than the flavored one’s available in the stores. This is another way to make reluctant children have the fruit that they at times refuse to. They will not only enjoy themselves, but every ingredient in this Popsicle is a good source of nutrient for them, ensuring a healthy take off on benefits towards healthier you and your family.
