Scrambled Pathrade Pannache Muddo with Spring Onions-coconut and lots of seasoning
Scramble 4 cups of Pathrade panna muddo / Idly and keep aside.
Chop 1 cup of spring onions finely and keep it ready. Also chop one onion and keep it aside.
Heat 3 tblsp of oil in a kadai, when hot add 1 tsp of rai (sasam) when they splutter add in 2-3 red chillies broken to pieces, 8-10 curry leaves and 1 tsp of hing powder fry and add in the chopped onion (one) and fry till translucent, then add in the chopped spring onions and fry and let cook for 5-7 minutes. Add 1/2 cup of freshly grated coconuts, mix all together and fry for a few minutes.
Now add the scrambled pathrade muddo and mix well. Cover and let cook on its own steam for 10-15 minutes. Keep checking in between so that it does not get burnt. If you feel it is going to get burnt sprinkle a little bit of water and mix well. Check salt and add if necessary.
Serve this as it is or with dal rice.
