Melt 2 cups of Jaggery with 2-3tblsp of water, bring to a boil and one thread consistency.
In a small pan heat 1 tblsp of ghee, add 1 tsp of jeera, add in 1 tsp of red chilly powder and pour this over the melted jaggery. Add 1 tblsp of tamarind paste, pinch of salt and cardamom to the jaggery mixture, mix all and bring to a boil. Cool and serve with dosa especially panpole, oondi, dhokla or any other dish of your choice.
Note : Do not over cook the jaggery or else it will become chewy in texture.
