Soak 1 cup of tingalavro / white beans overnight. Wash the beans in plenty of water and pressure cook to 3 whistles. Peel 1 big or 2 medium sized potatoes and cut into cubes. Add to the beans and pressure cook to one whistle or boil till potato is cooked.
Add 3-4 green chillies slit lengthwise to the beans and add water to bring to a saarupkari / patlabhaji consistency. Boil till well combined and a bit thick.
For Seasoning : Heat oil in a small pan, when hot add 1 tsp of rai (sasam), when they splutter add, 1 red chilly cut to pieces, 1 tsp of hing powder and 8-10 curry leaves. Pour this over the saarupkari, cover and leave it for 10-15 minutes to rest before serving. Serve hot with rice.
