Chilled Nanchane Uddaka / Nachani Extract with Jaggery ......

Nanchano as we call it in Konkani is Ragi and is also known as Millet, Nachni, Sattemavu etc. Ragi is a healthy cereal that should be included in our diet in some form to obtain maximum calcium benefit as it is considered very good for health and is known for its high source of calcium in it. I use this frequently by adding it to dosa, duddali, juices etc. So go ahead and enjoy this simple drink that is good do beat the heat …… 


Take one cup of nachani and wash well see that there are no dirt or stones. Grind in mixer grinder adding about ½ cup of water to smooth paste. It does remain grainy. Sieve this on a muslin cloth. Put the residue back in mixer and grind again with some water. Strain once again on muslin cloth. Add required quantity of jaggery and pinch of cardamom. Serve chilled.


Note : when serving mix well as how much ever well it is strained some fine nachni powder remains at the bottom. You can leave out the residue at the bottom or mix well and serve immediately as the nachani is good for health a little grain hardly matters. Good during summer heat. I have used nachni powder to do the same but was not satisfied with the results. Straining on muslin cloth gives best result than a sieve.

** You can also use nanchani powder readily available in the grocery stores, the recipe remains same just add the powder in place of grains.
