Gardudhe (Lauki / bottle gourd) + Beetroot + Beans + Tomato Sambar..


Gardudhe(Lauki) + Beetroot + Beans + Tomato Sambar.

Wash and pressure cook 1 cup of Tuvar Dal with 2 cups of water to 3-4 whistles. Remove and churn it well, there should be no lumps. If the dal is well cooked it will give you a smooth paste.

Chop the vegetables into desired shapes and sizes ( i have used lauki / bottle gourd, beetroot, beans and tomato). Cook the vegetables till done and add them to the dal, add chopped tomatoes, salt and bring to a required consistency. The sambar for Idly / Vada / Dosa are comparatively thinner than the one's done for rice. Bring to a good boil. 

Heat a medium sized pan with 2-3 tblsp of oil, when hot add rai (sasam) when they splutter add in 8-10 curry leaves, 1 tsp hing powder and 2 heaped tsp of sambar powder. Fry a bit in the oil and then add to the cooked vegetable dal. You can add some dal if you feel that the sambar powder is getting burnt. Bring the sambar to a good boil on slow fire for 5-10 minutes. Garnish with coriander leaves.
