Wash & completely dry 1/5 Kg. of Karela’s. Chop Karela’s into small cubes after removing the seeds insides. Apply a bit of salt all over & keep covered for 10-15 minutes. Squeeze out the water properly and let drain. Heat oil in a thick bottomed kadai, when hot enough add in the Karela’s / karathe in oil and fry till they turn crispy. Drain & keep aside.
Chop 2-3 big onions finely. Add about 3 heaped tblsp of freshly grated coconut to the onions. Add 2-3 Green chillies slit/chopped into pieces. Mix in the fried karela’s well. Add salt if necessary. You can granish with a tblsp of finely chopped coriander leaves. Serve this dish immediately after mixing the ingredients or else the karela’s will go limp.
