Karmbalache (Star fruit) godi-upkari / sweet curry ... A delicious dish that is prepared in most Konkani Saraswat Homes ... Star fruit tastes awesome with its tangy flavor in addition to the sweet jaggery infusion ... Yumz.
Wash, trim the edges of star fruit slightly and cut 5 large sized Karmbal into horizontal slices, you will get star shaped rings. Keep them a bit thick while cutting about 1/3 inch thickness.
Boil 4 cups water to which 2 cups of jaggery is added. Bring to a good boil. Lower heat and add in the Karmbal slices and 3 green chilly cut into 2 lengthwise. Let this simmer till the Karmbal gets cooked.
Mix one tblsp of cornflour in ½ cup of room temperature water till it dissolves well. There should be no lumps. Add this slowly to the Karmbal godi-upkari and mix well immediately.
The curry will get thickened, continue cooking on slow for another 5 minutes. If you feel the curry has not thickened enough, you can add another half a spoon of cornflour mixed in water. Remove from heat and keep it aside.
For Tempering : Heat 1 tsp oil in a small kadai, when hot add in 1 small tsp of rai (sasam), when it splutters add one red chilly cut into pieces (Optional) and 5-10 curry leaves.
Pour this over the godi-upkari, cover and keep aside for some time. You can serve this both hot as well as cold.
Note: The green fruit in picture is Karmbal / Star fruit.
