Multigrain Atta Poori with Bibbo(cashews)+Tendle(Gherkins) Upkari.
For Poori : Knead Multigrain atta with a little bit salt and water to a tight dough. Let rest for 10-15 minutes. Roll out to thick medium sized poori and deep fry in hot oil.
For Bibbe Upkari / Gherkins Bhaji : Soak 1 cup cashews for 30 minutes in lukewarm water. Cut 2 cups of tendle / gherkins lengthwise and add to the cashews and pressure cook to one whistle.
Heat about 1 tblsp oil in a kadai, when hot add 1 tsp rai (sasam) when they splutter add in 4-5 red chillies cut into pieces, pinch of hing powder and 8-10 curry leaves. Add in the cooked gherkins, cashews and salt as per taste, mix well and cook for a few minutes, add 2-3 tblsp freshly grated coconut and mix well. Cover and cook on its own steam for 5 minutes. Serve hot with poori/roti.
