Vegetable Bondas with Mixed Fruit Jam Tambuli / Chutney.


"Vegetable Bondas Served With Mixed Fruit Jam Tambuli / Chutney" ... Vegetable Bondas are a famous deep fried snack served at many functions in Mangalaore ... These taste yummy when served hot with some chutney ... The same goes very well with khatta meetha teeka chutney too ... Here is my very own concoction of Mixed Fruit Jam Tambuli / Chutney that I served with these Bondas and they tasted yumz .... 


Vegetable Bonda is a deep fried snack famous in Southern parts of Indian, though now it is quite famous worldwide. These are vegetable with a blend of mashed potatoes spiced and deep fried by giving a coat of besan batter. A very simple dish that can be enjoyed with family and friends during festive season. The inner filling can be prepared in advance and kept in the fridge which remains good for 6-8 hours. You can then prepare the batter and fry them hot and serve immediately with any chutney of your choice. Tambuli is a chat pata ie khatta~meetha~teekha meaning tangy~sweet~spicy side dish prepared with aambe saat or ponsa saat which is actually sun dried ripe mango and ripe jackfruit leathers. It is very difficult for me to get these saat in Mumbai as they are rarely available in southern Indian stores. So I went about and prepared it in my own way and created my own concoction of  chutney using mixed fruit jam and I vouch for this awesome chutney which is def. there to stay in my kitchen.


** For the inner filling of Bondas : Wash and put 2-3 large sized potatoes in a pressure cooker and pan. Add in sufficient water and pressure cook to 4-5 Whistles. Let cool and the pressure drop. Remove once cooled and gently peel off the skin. Cut into large chunks and mash to a smooth texture. Keep this ready. 

** Peel off the skin of one large sized beetroot and cut it into very small pieces. Peel off the skin of 1 large carrot and also cut the same into very small pieces. String and cut into small sized rounds about 100 gms of beans. Cut 100 gms of cauliflower also similarly. Now wash all these vegetables, strain and put them in a Micro Wave proof glass bowl and cook of high heat for 3-4 minutes. Stop and mix well all the vegetables, sprinkle some water if too dry and cook till done. It may take another 2 minutes or so. Remove and let cool. 


** Add the cooked vegetables and mashed potatoes in a large flat stainless steel bowl. To this add salt to taste, 1 tsp jeera powder, 1 tblsp coriander powder, 1 tsp garam masala powder, 1 tsp red chilly powder, 1 tsp Amchur powder, ½ tsp fennel powder and mix well. Bring all to a binding consistency. You should be able to roll them into round balls. Keep the prepared mixture in the fridge for sometime say 10-15 minutes. It will be easier to roll then into round and even balls. After that remove and make them into lemon sized round smooth balls. 


** To prepare the batter for outer cover : In a bowl add 3-4 tblsps of besan (Chana dal flour), 1 tblsp cornflour, 1 tsp red chilly powder and salt to taste. You can add in any other spices if desired. Add about ½ to 1 cup of water and make a thick paste out of the flours. The paste should coat the back of a spoon evenly.


** For Deep Frying : Heat plenty of oil in a thick bottomed kadai, when smoking hot lower the heat to medium and wait for 5 minutes. Now dip the vegetables balls into the batter and roll to evenly coat it on all sides and gently leave it into the hot oil one by one. Do not over crowd the kadai. There should be enough space to roll the bondas to cook evenly on all sides. When evenly browned and done remove with the help of a slotted spatula, draining the excess oil and put them on a absorbent paper for the excess oil to drain off. Continue with the remaining vegetable balls and batter till all are done.

** "Vegetable Bondas" are done and ready to be served. Serve them hot with any chutney of your choice. I served this with mixed fruit jam tambuli / chutney my very own concoction and it was too good. An awesome combo of dish sure to be loved by young and old alike. Do try out both the dishes and serve your family and friends at any get together event and stay blessed.
