For Batura : In a large bowl mix 2 tblsp of sugar, 1 tsp salt, ½ tsp baking powder, ½ tsp cooking soda, 2 tblsp of curds till sugar melts. Add 4 cups of Maida, 1 cup of rava, 1 tblsp of oil to this and lightly mix with fingers.
The mixture should be like crumbles. Now add in sufficient water and knead to a soft dough till you have elastic dough. Cover with a wet cloth and leave for around 3-4 hours.
Knead the dough again and make into large sized balls. You will get around 8-10 balls depending upon the batura size you want. I made them large.
Heat plenty of oil for deep frying in a deep bottomed kadai. Roll the dough balls in maida flour and roll into a nice round shape of the size you want. When the oil is smoking hot, lower heat and gently put in each batura and deep fry on both sides by flipping on the other side also. Remove on an absorbent paper for the excess oil to drain off.
