** Here is my simple veggie meal that’s definitely a pleasure to relish on with your family. Beetroot is very good for health, so do not hesitate in preparing dishing using the same. The upkari/ bhaji looks simple and very easy to prepare too, but once your family relishes it they will definitely crave for more. These simple stir fried methods of preparing upkari/ bhaji is a long standing tradition in Konkani Saraswat Cuisine followed in every home almost on daily basis using some veggie, sort of a must as a side dish along with others.
** The curry is prepared with light colored red bean, that’s easy to cook and is used extensively in our community. The tuber veggie added along is kooka/ Chinese potato this time which is in season. The curry is always prepared along with any veggie as is in season and is excellent in taste. The whole lunch can be had on a no onion- garlic day too as none of the dishes include them.
