“Urad Dal ~ Poha (Beaten Rice) ~ Oats Dosa” … Served with Amla Jamun, Homemade Butter And Pineapple Pickle … Oats somehow always remains on the back shelf in my home unless it’s prepared in some appealing manner … So tried my own variation of mix and match and came up with this delicious dosa which turned out crispy and yet soft within … Yummy Yumz …...
** “Dosa’s” as all of you are fully aware are a delight to eat for breakfast. Konkani Saraswat’s or other Southern Indian people always prefer dosa or idly for breakfast. I am always on the lookout for preparing new variations in dosa. For some time now, many of my friends have switched over to oats saying it is good for health. It has been a few years and hubby and I still cannot adapt to its bland taste. If I prepare it, the way suggested on the pack, my hubby will not even touch it, sigh such is the problem with our taste buds. We are so addicted to spicy and aromatic dishes in such a way that though good for health, this bland oats always sits at the back row of my shelf. I do try to add it to something or the other and make my own concoction to consume the same.
** Somehow, I emptied the huge pack last month and was happy that I had not wasted it. Hubby unaware of it, thought I loved Oat’s and brought another huge pack home and to my dismay the pack is back with glee, challenging me to try out new dishes. Finally, I decided, I would learn to enjoy this healthy food by adding it along with some other ingredients and prepare dishes that could both be both relished and enjoyed, as it is healthy. So now, I grind them fresh to powder consistency and add to dosa batter, idly batter etc. The choices of mix and match for an innovative mind is innumerable. My mind clock has already started ticking on for new variation’s. Will be adding them soon, till then here is a simple dosa that turned out awesome. The dosa was very crispy and soft within and I really loved the thin texture I got. Try it, sure to love it.
** Ingredients :
Urad Dal : 1 Cup
Thick Poha / Pova / Phovu : 1 cup
Oats : ½ cup
Methi / Fenugreek Seeds : 1 tsp
Ginger : 1 inch piece
Green Chillies : 2-3 less spicy one’s
Salt to taste
Oil for frying
** Soaking of Methi : Soak methi seeds in ¼ cup of water in a small cup for an hour or so, just before you start grinding the batter. This is to be used while grinding the dosa better. I do not add the methi along with the dals coz. When we drain off the water, the health and medicinal properties of methi are also lost through it. You can use lukewarm water if you have only 10-15 mins time at hand only. It will give similar result.
** Wash and soak 1 cup of urad dal in a vessel with plenty of water for 2 hrs. Drain off the water and put it in a mixer grinder. Add in the soaked methi seeds along with the water in which it is soaked and grind to a smooth paste adding only that much water which is necessary for grinding. Add in the green chillies chopped fine and the ginger cut to pieces. Further, grind till all the ingredients are smoothly ground. The batter should be thick.
** Roast the thick poha and oats together in a thick bottomed kadai on low heat for a few minutes till slightly crisp. You can microwave it for 2 minutes the way I did. Whichever method see to it that you do not burn or brown the oats and poha. They should be just crisp. Put it in a mixer grinder and grind to a fine powder. Do not add water. Remove and let cool a bit if it is hot.
** In a large vessel add in the ground urad dal batter and the oats-poha powder and mix the two together well. See to it that there are no lumps. Add in water if necessary for binding. The batter should be very thick. Add salt to taste and leave it to ferment overnight or six hours.
** Note : See to it that you ferment the batter in a large vessel as the batter tends to rise. It may overflow, so a large vessel is absolute must.
** Next morning or after 6-8 hours, mix the batter well in a circular motion, till it is mixed properly. The batter should be thick enough but should be able to be spread on tava, so be careful with water. The batter is now ready to remove dosa's.
** Heat a Dosa pan to smoking point, lower the heat to minimum, add a teaspoon of oil and spread well with spatula or spread it evenly with tissue paper with a light press. Do not press too hard, as the tava is hot, your hands may be burnt, and also you may remove all the applied oil in the pan. I use this method of spreading with tissue to ensure there is no excess oil, as well as there is a thin layer / film of oil on the Tava.
** Now add a cupful of batter with a rounded spatula in the center of the tava and spread evenly into a round circle of about 10-12 inch diameter. Use light motion, do not press the spatula too much lest the dosa will tear. Also, see to it that the dosa is spread as thin as possible. This batter gives a very thin textured crisp dosa.
** Increase the heat to medium, add a tsp of oil all round the edges of the dosa and let cook uncovered till crispy and evenly browned on the bottom side. The top side will have been already cooked, so do not flip over the dsoa, as the dosa is thin in texture and cooked one side only.
** Now with the help of the flat dosa spatula, gently loosen the dosa all round the rim of the dosa and then remove it from the tava and serve it hot immediately. This dosa should be served immediately as it turns a little bit limp if left aside. Otherwise, it is very crispy and soft within dosa. Repeat the process and remove the required amount of dosas.
** Note : Prepare the batter in small quantity. I will not recommend storing away the batter in the fridge for further use as it ferments too much. So just prepare how much is necessary only and finish off the batter immediately.
