Simple Alsando/ Chawli/ Yard Long Beans Upkari (Bhaji/ Stir Fry).


"Simple Alsando/ Chawli/ Yard Long Beans Upkari (Bhaji/ Stir Fry)" … Upkari or Stir fried dish is a simple side dish prepared almost in every GSB Konkani Saraswat home to be served during meals .... It is surprising to note that when the whole world is now going ga ga on stir fried veggies, while our ancestors had already introduced it into our daily diet century back ... sometimes, It really disheartens to note that Konkani Cusine being so healthy lacked proper promotion worldwide as it stayed back behind closed doors unaware to people round the world ... do try this simple upkari that is delicious, healthy and nutritious …. Yummilicious ....

** This is a simple bhaji, sort of stir fried veggie as referred by present generation that is cooked in simple manner with minimum spices and garnished with freshly grated coconut. Goes very well served as a side dish with Dalitoy (Spice Tuvar Dal)– Rice. Most of the dishes that come into popularity are actually available in our very own kitchen as its just a rotation of old ones picked and promoted from here and there. 

** Upkari with simple dish with seasoning of mustard~ red chillies~ curry leaves or with garlic- red chillies; a traditional method in most GSB Konkani homes. It is very healthy and easy to be prepare and our ancestors saw to it that one bhaji prepared using of any veggie did accompany our meal. This was their way of seeing to it that the meals were balanced with healthy nutrition for all type of age people. 

** These simple types of upkari/ bhaji still occupies a place in our Thali/ Meals to date, at least in my home it does. I urge one and all to go ahead, prepare these simple veggies and enjoy the health benefits. I did post this upkari before too, however I have repeated it with minute difference being the use of a different variety of Alsando/ Yard Long Beans here while rest of the recipe remains the same. 

** The Alsando/ Yard Long Beans/ Chawli/ Alsande used here are longer and tender compared to the one’s I posted before which are the easily available one. These are available in plenty during monsoon, though many a times they are available almost all round the year. It is a tasty and a pleasure to munch on this tender dish that give a soothing effect to the tummy, so do give it a try if available in your vicinity. 

** Here is my simple recipe for "Simple Alsando/ Chawli/ Yard Long Beans Upkari (Bhaji)" ... my style which I learned from Amma ...

** Wash, wipe dry and cut off both the side edges of 400-500 gms of Alsando/ Yard Long Beans/ Chawli/ Alsande and then cut them into ½ inch sized pieces. In all I have used here about 3.5 to 4 cups of the cut pieces for the upkari. You may increase or decrease as per the requirement of your family members. 

** Note : The recipe is same as the Alsande Upkari recipe shared before in this Blog, the only difference is the variety of Alsando. 


** Add the cut pieces into a colander and rinse well under running water and then keep it aside to let the excess water drain off completely. 

** To prepare the Upkari/ Bhaji : Heat 1 tblsp of Coconut Oil (Nariyal Tel/ Narlel Tela) in a thick bottomed kadai/ pan, when hot add 1 tsp of mustard seeds (rai / sasam) and when they begin to splutter lower the heat to minimum and add in 3-4 dry red chillies (sukki mirsanga/ sookhi mirchi) cut into pieces along with 8-10 fresh curry leaves (kadipatta/ karbevu) and fry for a few seconds.

** Now add the drained alsando/ yard long beans, raise the heat to high and let cooki for 2 minutes stirring often, this helps in arresting the water content of the vegetables within and help in cooking further with minimum water. Lower the heat to minimum, sprinkle some water, mix well, cover and let cook until 80% done. 

** Remember to stir upkari/ bhaji a few times in between to avoid being burnt. Also check and sprinkle some water if you find it necessary. Add salt (namak/ meeta) to taste, mix well, cover and continue to cook until almost done. Lastly add 1-2 tblsp of freshly grated coconut (soyi/ nariyal), mix well, cover and cook for another 2-3 minutes only. Remove from heat and keep it aside covered to rest for 5 minutes and its done. 

** "Simple Alsando/ Chawli/ Yard Long Beans Upkari (Bhaji)" is done and ready to be served. Tastes best served hot and fresh as a side dish with Dalitoy (spiced tuvar dal) or tomato saaru (saar) along with rice during meals. This is the standard practice for preparing simple upkari using veggies and you will find plenty of posts with different veggies shared in the Blog.
