"Bikkanda Upkari/ Jackfruit Seeds Bhaji" ... I simple love jackfruit season, my mom too loves bikkanda very much ... there are so many lovely dishes that can be prepared with raw jackfruit, ripe jackfruit and its seeds ... jackfruit seeds were underestimated for decades now but we amchies always used it in our curries ... as the knowledge of its nutrition content began to spread so did the demand ... now the friendly jackfruit vendor does not give me those bikkanda he keeps aside for free, but sells it also in Kg's ... well no issues, I am all ready to buy them too ... here is a simple upkari/ bhaji/ stir fry to be served as side dish for lunch today ... Yummilicious ...
** Bikkanda is a very nutritious inner seed of Ripe Jackfruits and many dishes are prepared using the same. As the seeds are hard they have to be either roasted or cooked and consumed and never as it is. We Konkani Saraswats use them abundantly by adding them to curries along with pulses or other veggies when they are in season. It is also sun dried and stored or can be frozen and stored too. I have successfully stored them for a good 6-8 months for over two decades now in the freezer compartment of my fridge without any issues. I have written a article on freezing method 5 years back when I started blogging and most of my friends who were not aware of the same are now following the same procedure and enjoying them year round. I will share the link to the same at the bottom of this recipe so that you can check it out and follow the simple procedure too.
** For this recipe however I have used fresh ones as ripe jackfruit have begun to come into market and as my hubby loves ponosu he keep bringing them home and I get a lot of jackfruit seeds too which I love preparing in new methods and as the season comes to an end then I collect and begin to freeze. Jackfruit seeds are very nutritious and and prepared into flour too and used in baking, though I have not done so as sun drying is something I cannot follow though I would love too, as in my place the position of sunlight lacks and I hardly get good sunlight for hours as per the requirement. Do try out this simple method of upkari, it tastes very decious slightly sweeter and somewhat the taste of cashew nuts. You can have them with poori too as it tastes fantastic in that combo. ** Here is my simple method for preparing "Bikkanda Upkari/ Jackfruit Seeds Bhaji" … My Style ….
** I have used fresh bikkanda/ jackfruit seeds here, say about 18-20 medium sized ones.
** Cut the seeds into two pieces horizontally with a sharp knife or with scissors. Remove the outer while skin, put in a colander, and rinse under running water.
** Put the cut pieces into a pressure cooker pan along with one cup of water and pressure cook on medium flame to one whistle.
** Let the pressure drop on its own, then open the lid and let the pieces cool a little bit. Do not overcook them or they will turn mushy.
** In a thick bottomed kadai/ pan heat 1 tblsp of coconut oil (any oil), when hot lower the heat to medium and add in 1 tsp of urad dal (black gram dal) and fry till lightly color changes.
** Now add in 1 tsp of mustard seeds (rai/ sasam) and when they begin to splutter add in 4-5 dried red chillies cut into small pieces and ½ tsp hing (asfoetida) powder.
** Fry for a second and then add in 8-10 curry leaves (kadipatta/ karbevu), stir for a second and add 2-3 tblsp of freshly grated coconut (soyi/ nariyal) and fry for a second.
** Now add in the pressure cooked bikkanda/ jackfruit pieces, salt (namak/ meeta) to taste and mix well. Cover and cook on low heat for 2-3 minutes and it is done.
** "Bikkanda Upkari/ Jackfruit Seeds Bhaji" is done and ready to be served. This bhaji is usually served as side dish during lunch/ dinner along with dal- chawal and other dishes. In my home we even love having it with poori another great combination.
** A simple but nutritious dish that you should include in your meals if jackfruit seeds are available to you. You must see to it that children eat them even if reluctant initially as they usually are, but once they taste they will love it and demand for more.
** It’s the season of jackfruit seeds and I make the most of it when they are available fresh, so you will be seeing more back to back dishes with them, as though I do freeze them in recent times I prefer fresh veggies to stored ones.
