Karmbala~Pudina Panna/Starfruit~Mint Leaves Coolant


"Tanda Tanda Karmbala~Pudina Panna/Chilled Starfruit-Mint Leaves Coolant and Tallele Manji/ Pomfret Fries" ... Sunday treat for all of you ... Enjoy this chilled drink ... Tastes awesome ... Yummilicious .... 

** Starfruit also known as carambola or Karmbala as in Konkani my mother tongue is a star shaped tropical fruit available almost all round the year. It has a sweetish sour taste and can be prepared in many ways as dishes or with addition to other dishes too. Both curries and juice can be prepared from this as well as pickles and jams too. I have written a small information article on the fruit to which I will be sharing the link at the bottom of this recipe, as I do not want to repeat the same every time in every post that includes the fruit. ** Here is a delicious coolant / panna I prepared today with starfruit and mint leaves in similar way to mango panna we usually make. Tastes simply awesome when served chilled and is really a very good thirst quencher that you can relish when you come home tired or when you have been out in the sunlight for a long time. I loved this concoction of mine very much and I am sure your family will too. It is very easy to prepare and can be stored in the refrigerator for a few days say about 2-3 days too without any sort of change in taste. Go ahead and try this chilled drink if star fruits are available in your vicinity, you just need semi ripe ones for this one.

** Here is my simple way of preparing "Tanda Tanda Karmbala~Pudina Panna/Chilled Starfruit-Mint Leaves Coolant” … My Style …. 

** Wash about 4-5 large sized semi ripe starfruit and cut them into one inch sized pieces. Add in 2 cups of water and either pressure cook to one whistle or just cook in a vessel till it is slightly cooked. You can also microwave it for 4-5 minutes like I did and use the same too. Once the starfruits are cooked allow them to cool completely. 

** Pick the mint leaves and wash them well. We need about one cup of the leaves only. Put the cooled cooked starfruit along with the mint leaves in a mixer grinder. Add in about one inch piece of ginger cut into small pieces along with 1 tsp of pepper powder and grind to a very smooth paste. You can add in the required amount of water necessary to grind to a very fine paste. Remove and add in 2-3 glasses of water and mix well. 

** Sieve the mixture through a muslin or cotton cloth into a clean vessel. Add in 2-3 cups of sugar to the sieved juice and mix well. Add in juice of 2 freshly squeezed lemons and mix well. You can add in a few slices of the lemon skin to the juice too for garnishing along with a few thinly sliced slices of starfruits while serving. Add in another 2-3 glasses of water, mix well and keep it the refrigerator to chill. 


** "Tanda Tanda Karmbala~Pudina Panna/Chilled Starfruit-Mint Leaves Coolant” is done and ready to be served. Serve this coolant / panna chilled as and when required, as it remains good for 2-3 days in the refrigerator. I served them just before lunch time with “Tallele Manji/ Pomfret Fries" before serving some briyani later on and it was a wonderful meal. 

** You can relish this coolant / panna any time of the day when you feel thirsty or want to have a break. It is indeed an awesome thirst quencher when you come in after spending time in sunlight or after having a heavy workload day too. Children will enjoy this one during holidays when they take a break from playtime. Try it, tastes awesome and your family and friends will love it for sure. 

** Note : For this particular juice / panna you should use cloth to sieve the ground mixture as we need it clear without any residue of the fruit or leaves, you can check the consistency seen in the picture too. The coolant too should be thinned out well like that of lemon juice which we prepare for it to taste awesome. 

** Note : Addition of Lemon juice is must to get the tart taste as the starfruits used here are semi ripe, also once it is cooked and sugar is added it somehow looses a little bit of its tartness and addition of lemon juice gives it an awesome aroma as well as taste. However, how much to add is upto you, so plz. do taste and then add on as per your requirement. 

** Note : The Coolant / Juice / panna is prepared in thin form so I have added about 2.5 cups as we like our juice sweeter, you can increase or decrease as per your liking too. Do taste and then add on as necessary and needed only.
