“Goli Bajo (Spongy Fritters) served with Coriander- Fresh Turmeric- Ginger- Gooseberry- Coconut Chutney (Kottambari Pallo- Tarne Haldi mande- Alle’- Avalo- Soyi ghalnu Chutney)” … I could not resist preparing goli bajo’s and savoring them with this awesome chutney today … somehow though the prepared goli bajo’s always turn out spongy and delicious, they stubbornly refuse to turn out gol- gol (round in shape) like it’s name … well, what’s in a name, after all it’s the taste that matter, Isn’t it, and that it does taste excellent dunked in this equally delicious chutney … enjoyed having a late evening snack after a very long time … Yummilicious …
** I think I have written it all in the title about goli bajos and in my previous posts too, so nothing much to write. Almost all amchies ie GSB’s/ Konkani Saraswats and those from in and around Mangalore city are very familiar to Goli Bajo, this round tennis ball sized round shaped spongy fritters are one of the most sought after snack in the city and there are many outlets that sell excellent preparations of the same.
** They sort of melt in the mouth, yet have a crisp exterior too, and somehow to my dismay despite hundreds of attempts and trying out all tricks and tips shared from friends and others I have failed in preparing them to match the restaurant standards. Off course many of my friends do manage to prepare them, but mine though turns out great in taste and texture they never get that round perfect ball shape.
** In fact, I myself give each fritter a country name as per its shape while relishing them, most are named Australia, you can see the similar shape, but trust me they are excellent in taste. Today the chutney had turned out excellent and being Shiv Rathri we had No Onion- Garlic- Rice meal, So hubby just casually mentioned that this chutney would go well with goli bajo and here they are all done and ready.
** Off course I must give him full marks and heartfelt thanks for this suggestion as he was bang on right, the hot from kadai goli bajos did taste awesome dunked in this chutney and had I just brushed aside his suggestion, I would surely have regretted it. In all we had this as late evening snack, though we do not prefer to do so, but there are always exceptions when the heart graves to have something yummy.
