Spicy Tomato- Whey Saaru (Saar).


“Spicy Tomato- Whey Saaru (Saar)” … prepared this delicious spicy saar using the whey water collected while making paneer from curdled milk courtesy "Fridge breaking down" … well I strongly believe food should not be wasted unless off course it is beyond repair … whey is a high protein water collected while making paneer and is very good for health, there are so many dishes that can be easily prepared out of this whey water … so the next time you chuck it out think twice … here is a delicious saaru prepared with the same along with ground masala … Yummilicious … 

** This saar is the same as the normal one’s we prepare, the only difference being that I have used whey collected from preparing of paneer and used that water for preparing the saar. I have already written of my issue related with breaking down of fridge and the agony is I can’t go out and purchase a new one until the shops open and sales begin. Well, I am learning to cope up and somehow go through this phase also happily. I know I am repeating myself and many of you might get annoyed just like how I used to get when my Mom repeatedly kept telling me not to waste food or money for that matter, but today I am really grateful to her and my father for preparing us for tough times in life. My Mom always insisted that we work hard both at home and in career and enjoy a well deserved self made life. She herself is a very hard worker from childhood and has seen lots of ups and downs in life. She always said the joy we get in self earned dignity is the greatest achievement of life and that is what makes us a respectable person for life. 

** Luckily, for all of us she taught us the necessity to learn each and every work in all field’s so that we become self reliant and will not have to depend on others during time of crisis, that is why my siblings and me have all turned out to be hard working women who do not fear or have reservations on doing any sort of work. Please teach your children the same, one never knows when we will come across unavoidable circumstances in life and we should always make the coming generations prepared for it. Coming to the subject of “Whey” collected from paneer, I have never wasted it and usually prepare chapati dough or coolants etc. This is the first time I am adding it to a curry dish and it was simply fantastic, the saar turned out very delicious. Sharing the recipe below, please keep in mind not to throw away the whey water the next time you prepare paneer, just use it in preparing dishes, you can use the search option and you will find many dishes recently prepared using whey. ** Here is my very own method of preparing “Spicy Tomato- Whey Saaru (Saar)” … My Style … 

** Ingredients : 
Ripe Tomatoes : 2-3 medium sized. 
Whey Water collected while marking paneer : 3 cups 
Jaggery/ Goda/ Gud : one small lemon sized. 
Salt/ Namak/ MeetHa to taste

** For the Masala to be Ground : 
Green Chillies/ Tarni Mirsanga/ Hirvi Mirchi : 2-3 less spicy ones 
Kashmiri Red Chillies/ Byadgi Mirchi/ Kumte Mirsanga : 5-6 (+/- individual liking) 
Coriander Seeds/ Kothimbir/ Kothambari : 1 tblsp 
Cumin Seeds/ Jeera : 1 tsp 
Chana Dal/ Bengal Gram Dal : 1 tsp 
Black Pepper Corns/ Kali Miri : 4-5 
Curry leaves/ Kadi patta/ Karbevu : 4-5 
Coconut/ Soyi/ Nariyal : ¼ cup freshly grated 
Hing/ Asafoetida Powder : ½ tsp 
Haldi/ Turmeric Powder : pinch 
Tamarind/ Chinchama/ Imly : small marble sized piece 
Coriander leaves/ Dhania/ Kottambari Pallo : One handful. 
Oil/ Tel : 1 tblsp 

** For Tempering/ Seasoning : 
Ghee/ Toop : 1 tblsp 
Mustard Seeds/ Sasam/ Rai : 1 tsp 
Cumin Seeds/ Jeera : ½ tsp 
Curry leaves/ Kadi patta/ Karbevu : 8-10 


** Wash, wipe dry and cut the tomatoes into small pieces. Put them into a vessel along with 2 cups of water and cook till soft. Now with a potato masher, mash the tomatoes slightly and then add in the whey water and mix well, bring to a boil, lower the heat and simmer while you begin to prepare the masala for grinding.

** Heat oil in a thick bottomed kadai, when hot lower the heat add kothambir, jeera, chana dal, kali miri and fry for a minute then add in green chillies cut into pieces, Kashmiri Red Chillies cut into pieces and further fry for another minute. Now add in hing, haldi, curry leaves, fry for a second and finally add coconut and fry for 2-3 minutes all together. Remove and let cool a bit. 

** Add the above fried items ito a mixer grider along with coriander leaves, tamarind and grind to a fine paste with water. Remove and add the ground masala to the simmering tomato whey water, add salt to taste, grated jaggery and mix well. Check the consistency and add more water if required and bring to a rolling boil, then lower the heat and simmer for at least 10-15 minutes. 

** For Tempering/ Seasoning : Heat ghee in a small pan, when hot add in mustard seeds, when they begin to crackle add jeera and curry leaves and then pour it over the simmering saaru. Remove from heat, garnish with handful of coriander leaves, cover with a tight lid and keep it aside at least for an hour. The taste of the saar always doubles up on resting and do not worry, the taste does not loose out on reheating. 

** Spicy Tomato- Whey Saaru (Saar)” is done and ready to be served. Bring the saar to a full boil just before served and serve it steaming hot with rice for best taste. You can also serve it with mildly spiced rice dishes like pulav, ghee rice too or you can serve it as an appetizer as it tastes great to sip on during winter/ monsoon or if you have caught on cold. Do try out this delicious saar with whey water the next time you prepare paneer, you will be surprised with the awesome taste.
