"Gulkand- Kaju- Khus Khus- Milk Coolant topped with Sabja Seeds" ... Sunday treat, though all days are now the same ... only milk is available in plenty in my vicinity so, I have decided to try out various coolant options with it ... Gulkand is a sweet preserve of rose petals having coolant properties and tastes great when added on to milk dishes, Sabja too has coolant properties ... However, I must say here that, all ingredients added on to this lovely coolant are high in calories ... this large glass actually serves 3-4 persons so please drink sparingly .... Yummilicious ...
** Things are somehow so unpredictable and we have to learn to do with whatever resources are available. I am a foodie and I love experimenting with different ingredients, but such calamity and limited access to ingredients is being experienced for the first time by many of us. In my life I have seen both good and bad days, and it does not scare me when there is limited food that can be used. Hubby and me both have seen days which I would not wish for my enemies too, while we could always have our two square of meals well, there were certain other things that prevented us from being extravagant. Once again after almost 3 decades we are finding ourselves in the same situation. This time the difference being we have a roof on our heat, enough of necessities but again there is limited access to daily life requirements. But that is life, who said it is easy, we have to learn to be happy with whatever little God gives us. Be content that at least we have a meal, while there are so many out there without home and food, so stop cribbing.
** As mentioned frequently, most parts of Mumbai and those in and around the city has come under red zone during this lock down phase of Covid-19. During last week strict measures are being undertaken in and around our vicinity to avoid unnecessary movements by people causing nuisance to all. Groceries and Veggies are both completely stopped and out of reach, while milk and medical stores are the only ones that are made accessible. There is a limit to hoarding and I have not done much of stocking up of grains etc. except say for 15-20 days, I am sure something will turn up by then. Being innovative and loving to experiment with preparing of new variations in coolant or other dishes, I though why not try out the same with milk as the basic ingredients. That’s it, you will be seeing many more dishes with milk for sure as that is what is available, so that is what I will be relishing. I suggest to all out there, think, give your brains some work, every ingredients can be turned out into something delicious, all you need is to try them out.
** Here is my simple recipe for "Gulkand- Kaju- Khus Khus- Milk Coolant topped with Sabja Seeds" … My Style …
** Clean and soak 1 tablespoon of Sabja also known as falooda seeds, basil seeds or tukmaria seeds in about ¼ cup of clean potable water for about 30 minutes as that they increase in size. They turn out beautiful spongy swollen seeds, that are good for the gut and digestion of food etc.
** Note : You may leave out these seeds if they are not available, but if you have them to include them as they have cooling properties and are a powerhouse of nutrition and packed with immunity-boosting properties. Just a tablespoon of this small seeds run a long way in betterment of health as they have many more healthy properties which you will find if you search for the same in Google.
** In a mixer grinder add in 8-10 cashew nuts (kaju), 1 tablespoon of khus khus (poppy seeds) and 3-4 tablespoon of Gulkand (rose petal preserve available in all stores), ½ cup of cold milk (doodh) and grind to a smooth paste. If need be you can increase a little bit of milk too.
** When the paste is ground smooth add in 3-4 glasses of chilled milk and once again using pulse mode mix all till its blended. Remove into a vessel, add in the soaked sabja seeds which will now have been doubled and mix well. Keep in fridge for an hour to get chilled.
** "Gulkand- Kaju- Khus Khus- Milk Coolant topped with Sabja Seeds" is now done and ready to be served. Stir well and pour into individual glasses and serve it cold immediately to your family and friends. This is one of the best drink for children ensuring they drink their share of milk which they are otherwise hesitant to have.
** I would also like to mention here that though this is an excellent drink, it is definitely a high calorie coolant and must be had sparingly if you are facing health issues or are over weight. Though every ingredient is loaded with health benefits, it is also of high calorie and is not recommended if diabetic or having any other ailments. So have them sparingly or see to it that you do some heavy exercise to melt that calorie away.
** Note : There is absolutely no need to add in sugar to this coolant as Gulkand being a rose petal in sugar preservative is too sweet and I strongly feel that the content in it is enough for the blend, however do check out the sweetness and add on accordingly if need be, I have not added in any and also used only 3 tablespoon of the same for about 3.5 glasses of milk.
