Spicy Cheesy Tomato Pasta.


"Spicy Cheesy Tomato Pasta" ... I was really in no mood to prepare a whole meal after a tummy filling breakfast (alsai jalle) ... I am sure it happens to all of us at times ... so for a change relishing pasta for lunch followed by aapus ambo (alphonso mango) as dessert .... Yummilicious ... 

** Pasta is something I very rarely prepare in my home, for that matter all Italian dishes or for that matter any non- Indian dish, always somehow takes a backseat, though I do love eating them. I always purchase small packs of macaroni, penne, pasta, Hakka noodles etc. with full enthusiasm all ready to prepare them but somehow always forget to do so when at home and remember only when I see some post or any of my friends mention the same. Being a typical Konkani Saraswat in heart I love our food and more so now as I age now. Penne or Pasta or Marconi they all taste the same to me, but I do love having them sometimes and make it a point to replace them as my lunch/ dinner when I am too lazy or for some reason there is lack of time to prepare full meal. Well, I have prepared this dish with wheat Penne (Pasta), slightly giving it a twist by adding on Malvani masala powder for spicing up the dish and making it more adaptable to suit our taste buds. In all a delicious dish with plenty of cheese and spices and simply yummy. 

** Here is my simple recipe for "Spicy Cheesy Tomato Pasta" … My Style …. 

** Boil about 4 cups of water to boiling point, add in a large pinch of salt and then add in about 20-25 penne pasta into it after washing it under running water. I used wheat penne pasta, you may use any that is available to you, even macaroni can be used. Cook on boiling water till almost done. Do not overcook, when it turns soft remove and drain off the water and rinse it under running water to arrest further cooking and to retain it as it is. Keep this ready aside. 

** Finely chop one large sized Onion/ Kanda/ Piyavu and 4-6 cloves of Garlic/ Losun/ Lehsun and keep it ready aside. Grate about 4 tblsp of Cheddar Cheese and keep them ready aside. 

** Wash, wipe and chop two large sized Tomatoes and grind them in a mixer grinder to a very smooth paste, remove and keep this ready aside. 

** In a thick bottomed Kadai add in 2 tblsp of Oil and bring to heat, when hot, lower the heat to medium and add in finely chopped garlic and fry for a minute, then add in the finely chopped onion and continue to fry for a few minutes till slightly pink in colour. 

** Now add in 1 tblsp of Malvani Masala Powder (you can add any of your choice) and fry for a second. Add 2 tblsp of Red Chilly Sauce, 1 tblsp of Tomato Ketchup, the ground tomato, salt to taste (be careful as the sauces contain salt too) and mix well. 

** Cover the kadai/ pan and cook on low heat for about 3-4 minutes, stirring in between till cooked well to a gravy consistency. Now add in the cooked and kept aside penne/ pasta and mix well, check the consistency and sprinkle some water only if necessary (I have not). 

** Cover and cook mixing often for about 5-8 minutes, till the penne gets well blended with the masala. Finally add in the grated cheese along with 1 tblsp of red chilly flakes (Optional) and mix well till the cheese just about begins to melt. Remove from fire and its ready. 

** "Spicy Cheesy Tomato Pasta" is done and ready to be served. Always serve pasta hot immediately when done as once the cheese starts melting it turns out sticky and looses that cheesy flavor. Tastes delicious with the spicy flavors to match Indian taste and at the same time giving a cheesy taste too. A mildly spiced dish that is sure to be loved by young and old alike.
