Ellaichi Shakkar Poli.


"Ellaichi Shakkar Poli" ... when you crave to eat something sweet, try these simple delicious sweet crispies that taste awesome when eaten freshly prepared ... these are simple roti's filled with sugar and to make it more tastier I gave it cardamom flavor ... My Mom loves these and so do I ... Yummilicious ...

** This is a simple age old dish prepared in most homes for the sake of children, to keep them happy and diverted from feeling hungry. Sort of a sweet dish, yet prepared out of the same dough that is kneaded for preparation of normal roti with wheat flour. Again, I came across this simple sweet roti after my marriage from my Maharashtrian neighbors. They always prepared a few during holidays to give their children during mid break in the mornings to keep the busy and wait patiently for lunch till late non avoiding them feeling hunger pangs. There is nothing special in this roti, but I thought it must be posted for the sake of those Mom’s who always wonder what good home food to be given to their young children during weekends or holidays. The next time don't buy any fast food or give your child or family those off the shelf cookies etc. try these age old dishes and enjoy them in your home.

** There are many more options in this roti, which I have made of my own, prepared in minute changes which I will be posting as and when prepared. This time I have prepared it with sugar filling and with a dash for cardamom powder for flavor, but the same can be prepared with addition of jaggery/ gud/ goda powder too. Well, there are many more options as I mentioned and you can run on your own imaginations and try them out too. However, as of now, do try this one out, it is really simple and hardly takes any time or effort as the dough used is the same while you just need to add some sugar and prepare a few to munch on at mid break for your family. The time has come for us to go back to our roots to stay healthy avoiding fast foods for not only making good eating habits for coming generations, but for building up of our immunity levels too. ** Here is my own adaption of "Ellaichi Shakkar Poli" ... My Style .... 


** For preparing the wheat dough : The dough is same as chapati dough, Just add in required amount of wheat flour in a wide stainless steel bowl, add in a pinch of salt and a tablespoon of oil and mix it well into the flour to form it into crumble. Now add in water little by little and keep binding the dough till you get a smooth tight dough. Keep this covered aside for 20 minutes and the dough is ready for preparation of chapati. 

** For preparing the “Ellaichi Shakkar Poli” : Keep ready sugar, cardamom powder and melted ghee before you begin with the rolling of the poli. Take a lemon sized ball of dough, dust with loose wheat flour and roll it into the size of a large poori. Now apply melted ghee all over the surface in a very thin layer. Add in a tablespoon of sugar (medium texture) spreading it evenly over the surface leaving about ½ inch side of the rim. 

** Sprinkle some cardamom powder over the sugar and then sprinkle some loose wheat flour. Now lift the side edges and flap over the sugar and cover it back to form like a ball. You can check the step by step picture procedure posted on the collage for better understand. The method is the same as you do any other stuffed parathas. Now dust it all round with wheat flour and roll it evenly with light pressure into a round roti about 8 inches in size. 

** Heat a thick bottomed Iron tava or non stick tava to smoking point and then lower the heat to medium, wait for a few minutes and then brush the tava with a little bit of melted ghee all over and then gently place the sugar stuffed roti on it and let cook. The heat should be kept medium, when you see light bubbles appearing on the top apply and spread a little bit of melted ghee all over the top surface, gently lift the roti with a spatula and flip over and cook the other side too. 

** You may see dark brown sugar sticky water oozing out, do not worry, that is the way it is supposed to be. Due to heat the sugar within melts and begins to caramelize and melt giving way out of the roti surface. That is the very reason why you should not keep the heat high as then the sugar will melt too much and will get burnt which will make the roti bitter in taste. When you lift the roti the tava may be sticky so be careful, remove and keep it on a plate to cool a bit. 

** Repeat the procedure with the required number of shakkar poli you want, the addition of cardamom flavor is a twist I gave to the roti while traditionally it is absent, so you may skip it off too, if you do not want to add the same, but do try it out once as it gives a lovely aromatic sugary roti to munch on. This roti turns slightly crisp and will not remain soft, sort of sweet crispies best eaten fresh from tava and will not recommend keeping it for later eating. 


** “Ellaichi Shakkar Poli” is done and ready to be served. These sweet crisp poli are best eaten fresh from tava and they somehow turn hard and chewy if left over time, but some do like that too, in my home we eat fresh and keep a few to be eaten later in the evening too, both are equally loved, so the choice is yours how you like to relish the same. Children are sure to love these sweet poli and they are much better than giving them those fast food dishes. 

** Important Note : I must mention here the necessity of cleaning the tava after every or after preparing of two poli’s at a stretch. The sugar gets stuck to the tava and the spatula edges too as you may notice while preparing the same. Do not continue frying the roti under that condition, you have to rectify the tava to get properly prepared sweet roti without getting burnt or sitcky surface on the following roti, so cleaning in between is very important. 

** No, plz. don’t get tensed, cleaning is very easy, after every poli or after 2 poli, just sprinkle some water on the tava it will sizzle and collect, immediately rub it with a clean tissue or a clean cotton cloth which you should keep ready before starting to fry the roti. If need be you can sprinkle some more water and rub the the tava clean. The water melts with the sticky sugar on the tava well and get cleanly removed, you can check out the picture for reference. 

** Sweet dishes or sweet cravings are often felt by each one of us specially during this lock down period when the mind keep wandering and thinking of unwanted issues. Being home bound too is very boring how much ever busy we keep ourselves with, also hunger pangs hit on more than otherwise. Do not purchase unhealthy food from stores and stock up, take up this opportunity to learn and prepare a few at home yourself, you will be thankful in the long run.
