Cauliflower- Knol Khol Upkari/ Baji/ Stir Fry.


“Cauliflower- Knol Khol Upkari/ Baji/ Stir Fry” … a simple bhaji I often prepare with cauliflower and potatoes, but today I had one knol khol/ navilkhos remaining which had to be finished off, so prepared this bhaji in combo … tastes wonderful when served with roti, paratha or poori … I served it with spiced tomato poori and it was excellent combo … Yummilicious … 

** A simple bhaji/ upkari prepared with knol-khol and cauliflower along with onions that tastes well as side dish that can be served with roti, poori, parathas or along with dal-chawal. I wanted to serve this with poori so in order to make it spicier I added some sambar powder and chilly powder instead of whole red chillies which we usually add to upkari as in Konkani Saraswat Cuisine upkari are kept simple spiced and served usually with dal chawal. Well I won’t run into much details about upkari/ bhaji, but will share a common link at the bottom of this recipe via which you will find plenty of entries in my blog of different varieties of upkaries prepared with different veggies and each one is simply wonderful, delicious and healthy on its own, so do try them out too and you can mix and match in your own way as and how your family likes. 

** For this upkari I have used Knol-Khol also known as Noolkol/ Turnip/ Kohlrabi/ Navilkhos is a veggie available worldwide sometimes in different color but by and large it’s color is slightly off whitish green, let’s say very light green on the outer skin portion and pale yellow within. I have added on cauliflower florets and onion sliced lengthwise to this upkari along with some spices. Served these with tomato poori as shown in the picture posted below. This was really excellent combo and both the dishes complimented each other wonderfully. Again, I have used sambar powder to spice up the dish, if it is not available to you, you can add on any other masala powder like malvani, chole or pav bhaji masala powders too and the bhaji will taste equally good, otherwise do use your own variations and try it out, I am sure it will adapt well to any spices. 


** Here is my simple recipe for “Cauliflower- Knol Khol Upkari/ Baji/ Stir Fry” … My Style … 

** Clean and cut the cauliflower into medium sized florets. Slice off the thick outer skin of the knol khol and cut them lengthwise into ½ inch thickness. You should have both cauliflower and the knol khol in equal quantities say about 3 cups each. Soak both in water for about 5-10 minutes then drain off all water by putting it in an colander. Now put them in a kadai with about 1 cup of water and cook both together till 80% done, keep mixing and checking water level, remove and keep it aside. 

** Heat 1 tblsp oil in thick bottomed kadai, when hot lower heat add ¼ tsp of methi (fenugreek seeds), ½ tsp jeera (cumin seeds), ½ tsp urad dal (black gram dal), ½ tsp sasam (mustard seeds/ rai) and a few curry leaves (karbev/ kadipatta) and fry for a few seconds. Now add in ¼ tsp of haldi (turmeric) powder, pinch of hing (asafoetida) powder, 1 tsp kashmiri mirchi powder (chilly powder) and 1 tblsp of sambar powder (I used store bought), fry for few second but do not allow to get burnt. 

** Now add in one large sized onion (piyavu/ kanda) after peeling and slicing them lengthwise thinly. Fry it till it turns slightly softened (translucent), add salt to taste and mix well. Lastly add in cooked and kept ready aside cauliflower and knol khol and once again mix well with light stir and see to it that they do not break. Cover and cook till done on low heat. Remove from fire, add in a teaspoon of freshly squeezed lemon juice and garnish with handful of finely chopped coriander leaves (I did not have them). 

** “Cauliflower- Knol Khol Upkari/ Baji/ Stir Fry” is done and ready to be served. Serve this simple- healthy- delicious upkari as a side dish along with roti, poori, chapatti as it taste best with it or you can also serve it with rice and dal along with some other dishes too. In all a delicious bhaji which I served simply with tomato poori for lunch and it was a wonderful combo and in my home we simply loved, so did a few friends of mine who tried this out immediately.
