"Saffron- Cardamom flavored Whey Lemonade (Sherbat)" ... the milk that got curdled courtesy "Fridge breaking down" was made into paneer (cottage cheese), now the dilemma was to use the whey immediately .... so prepared a few dishes with them and one of them was this awesome delicious lemonade ... tastes so good and we really enjoyed sipping it on chilled with some biscuit rotti's to munch on .... Yummilicious ...
** I had posted this delicious lemonade with biscuit rotti the outer dough of which was prepared with whey, and this was prepared at the same time, however I somehow forgot to make the posting and came across the picture in draft mode today. Here it is, a delicious lemonade that tastes simply awesome and is a must if you have whey collected while preparing paneer/ cottage cheese at home. As my fridge is broken down and the world is also reeling under covid 19 crisis, I cannot attend to it as stores are closed and I do not want to purchase anything in hurry lest I regret later. But in the process the milk got curdled quite a few times and I had to prepare paneer to avoid it being wasted. I have made many dishes with both paneer and the whey collected as I am strongly against wastage of any kind be it food or otherwise. Well for those of you are not aware of preparation method of paneer that is cottage cheese I am sharing a link below at the bottom of this recipe, you can browse through the recipe and prepare them at home as it is easy and there is nothing like homemade.
** I am sure all of you will understand the lapses in blogging as we are all almost working round the clock at home doing all the work ourselves. It is becoming increasingly difficult to cope up with the situation as social life has been completely cut off and buying of veggies and groceries have become a major issue in Mumbai. ** Here is the simple method of preparing “Saffron- Cardamom flavored Whey Lemonade (Sherbat)” … My Style …
** Note : The recipe is same as posted before to which also I am sharing the link at the bottom of this recipe, and you can check out the same too. The only difference here is that I have used whey ie water collected while preparing the paneer in preparation of the lemonade and trust me it taste wonderful.
** For Preparation of “Saffron- Cardamom flavored Whey Lemonade (Sherbat)” .... I have used about 6 cups of whey/ water collected while preparing of paneer/ cottage cheese here. Add about 4 tsp of sugar (shakkar) and ½ tsp of saffron (kesar) threads in the smallest jar grinder of the mixer along with ½ tsp cardamom (ellaichi/ yellu) seeds and grind to a smooth powder. Grinding of saffron along with sugar gives the lemon juice that lovely pale yellow colour.
** Note : You can add more or less of sugar depending upon individual taste, but do keep in mind that whey is slightly sweeter in taste than normal water, so when preparing lemonade it needs slightly lesser sugar than usually needed.
** Remove and add the powder to the collected whey water. Add a pinch of rock salt (kala namak), freshly squeezed juice of 2 large sized lemons (nimboo) and mix well. Keep the prepared lemonade in the fridge to get completely cooled/ chilled. “Saffron- Cardamom flavored Whey Lemonade (Sherbat)” is done and ready to be served. Serve chilled in individual glasses, garnished with a few strands of saffron (optional) and some fine cardamom powder sprinkled on top. Enjoy this awesome lemonade during summer with your family and friends as whey is high in protein and good for health.

** Sharing below the "Method of preparing the Paneer (Indian Cheese/ Chenna)" at home and the collection of whey water too. If you want to prepare paneer at home, it is very easy and is the most hygienic thing to do if you love paneer dishes as you never know what is added on to store bought paneer as I too have heard bizzard stories about them. So go ahead and try it at home its very easy, and once you try out you will never purchase from stores. In addition you will also get both paneer and whey water and you can prepare many dishes using both of them adding in making of different dishes.
