Roasted Vermicelli (Seviyan) Payasam/Kheer.


"Roasted Vermicelli (Seviyan) Payasam/Kheer" ... here is a simple delicious sweet Payasam that can be prepared for Naivedyam ... 

** I am sure all of you are fully aware on the preparation method of Vermicelli kheer with addition of milk. A very easy dessert prepared often to offer as Naivedyam/ Prasadam at the lotus feed of God in almost every home. Vermicilli is easily available in the market in many brands. I have used the thinner roasted variety for the preparation of this delicious Payasam. You get ordinary non- roasted vermicelli both in thin and thick texture too and you can use any for the preparation. It is just that the roasted ones need not be fried while the others have to be done for better flavor and thinner ones are cut down on time.

** Here is my simple recipe for "Roasted Vermicelli (Seviyan) Payasam/Kheer" ....


** Heat 2 tblsp fresh homemade ghee in a thick bottomed kadai and add in a handful of cashew nuts and fry for some time. When the color changes slightly add in a handful of raisins and fry till they swell. Remove immediately from the kadai, straining off the ghee back into the kadai and keep them aside for garnishing later on.

** Now in the same kadai add 1 cup of roasted vermicelli to the left over ghee and fry for just a few minutes. This will hardly take time as they are already roasted. Once they turn light brown in color add ½ litre of hot milk and keep stirring, till the mixture turns slightly thick. Now add in a large pinch of saffron and bring to a boil, till the saffron imparts color.

** Add in about 1 cup of sugar (Plus or minus depending upon individual) and stir till done. Once the kheer has thickened a bit say about custard texture, remove from fire. Add in 1/2 tsp of cardamom powder and garnish with the fried cashews and raisins. Cover and keep it aside for about 20 minutes, if it thickens you can add hot milk, mix well and serve the same.


** "Roasted Vermicelli (Seviyan) Payasam/Kheer" is done and ready to offered as Naivedyam to God and thereby distributed among family and friends. You can keep this in the fridge in air tight container and serve it cold say after a few hours if desired too or you can serve this as it is hot, either way it taste great. 

** Always share Naivedyam amongst friends as it pleases God a lot and you will definitely be showered by choicest blessings. You can also prepare this as dessert on weekends or when you have guest for lunch/ dinner as this payasam is very easy and fast to prepare.
