Wash & scrub the baby potatoes well. I have not removed the skin of the potatoes, as well like it that way, you can remove if you wish. Prick the potatoes all over with a fork. Rub salt all over the potatoes. Put it in a Micro Wave dish & cook it covered with about 1 tblsp water for about 8-10 minutes. The cooking time differs from oven to oven & also the amount of potatoes used, so please check in to see if the potatoes are cooked. I used about only 15-16 small potatoes. If not using Micro Wave just pressure cook it to one whistle & remove the water or you can cook them in a vessel with some water too.
In a kadai heat 1tblsp oil add ½ tsp jeera followed by 8-10 curry leaves. Add in 4-5 sprigs of the fresh green garlic chopped roughly. When the garlic becomes a bit brown in colour lower the heat & add in the following masala. 1 tsp haldi powder, ¼ tsp jeera powder, ½ tsp coriander powder, ½ tsp Sambar Masala powder, ¼ tsp garam masal powder, pinch of hing powder, pinch of fennel seeds powder. Toss the potatoes well. Cover & let cook on its own steam on lowest heat for about 5-10 minutes. Masala Baby Potato Fry is ready. Serve hot with a dash of lime juice.
