Gosale Upkari / Ridge Gourd Bhaji ...... Simple and awesome with Dalitoy and Rice ....
This is a typical konkani dish where we keep the baji’s simple without much of any spices or masala.
** Peel only the outer thick ridged edges skin of ridge gour. Chop to pieces. Wash & drain well.
** Heat 1tsp oil in kadai add rais, slit green chillies & curry leaves. Add in the prepared ridge gourd & mix well. Cover & cook on slow for 5- 10 minutes. Add salt. Mix well check if cooked if done remove & serve with dal & rice.
