Cucumber Curd Pachodi (Salad).


"Cucumber Curd Pachodi (Salad)" ... is a delicious side dish served with spicy dishes ... Yummilicious ... 

** This is a simple pachodi ie chutney sort of side dish prepared with addition of curds to masala, that is usually served with spicy dishes like pulav, vangi bhat etc. tastes great. Without running into much details sharing the recipe right away. 

** Here is my simple recipe of preparing "Cucumber Curd Pachodi (Salad)" … my style … 

** Peel off the skin of one large sized cucumber (Taushe/ Khakdi) and cut it into ½ inch sized cubes and put it into a wide bowl. Keep this ready aside, you should have about 250 gms of the same. 

** Add in ½ cup of freshly grated coconut (soyi/ nariyal) along with 3-4 green chillies (tarni mirsanga/ hari mirchi), ½ inch piece of finely chopped ginger (alle’/ adrak) into a mixer grinder and grind to a very smooth paste with very little water. 

** When done add in ½ cup of the chopped cucumber (taushe/ khakdi) pieces, 1 cup of thick curds (dahi) and further grind to a very smooth paste. If needed you can add a bit of water, though it is avoidable as we need a thick ground masala. 

** Remove the ground masala and add to cucumber pieces in bowl along with salt (namak/ meeta) to taste and mix well. The consistency should be thick as in time even cucumber leaves a little bit of water; you can always check and add while serving if needed. 

** For Seasoning/ Tempering : Heat 1 tblsp of coconut oil (narlel tela/ nariyal tel) in a small pan, when hot lower the heat and add in ½ tsp of urad dal (black gram dal) and when the color changes lightly add in ½ tsp mustard seeds (sasam/ rai) and when they begin to splutter add in 1-2 red chillies (byadgi mirchi) curry leaves (kadipatta/ karbevu), fry for a few seconds and pour over the pachodi/ salad. 

** "Cucumber Curd Pachodi (Salad)" is done and ready to be served. Always serve pachodi freshly prepared immediately as it somehow loses taste if served after hours. Also do not keep it at room temperature, if to be served in few hours best to be refrigerated and removed about 15 minutes before serving. 

** Tastes best served as side dish to get along with spicy rice or rava based dishes like pulav, chitranna, vangi bhat, masala bhat, biryani etc. This is a healthy delicious chutney sort of dish which we call as pachodi as both masala and curds are added on and is loved very much in my home. Do try it out whenever you have cucumber at home, I am sure you will love it.
