Peel and wash 2 large potatoes into strips. Cut 2-3 cups of cauliflower into medium sized florets.
Mix well and rise with water, put in a micro wave dish and microwave on high for 2 minutes, mix well and again mw for 2 minutes. It should remain undercooked ie. 75% cooked only. Remove and keep aside.
Heat 2 tsp oil in a kadai, add pinch of methi seeds, ½ tsp urad dal, when it turns slightly in colour add ½ tsp jeera, ½ tsp rai and a few curry leaves. Now add in ½ tsp of haldi powder and 1 tblsp of sambar masala powder, fry a bit, if you feel it getting burnt sprinkle some water.
Add in the semi cooked cauliflower + potato, salt to taste and mix well. Cook covered till done. Serve with Roti / Dal-chawal.
