Gulla Bajji Bimbul Ghalnu / Brinjal Bharta with Bimbul



Roast a Big sized Brinjal / Gula on Gas burner on all sides after pricking it on sides a bit. You can skip this method and just remove the skin of one big brinjal and cut them into chunks and pressure cook to one whistle.


Clean the brinja by removing the outside burnt skin of brinja if roasted on gas. Put the inside flesh of brinjal in a bowl and mash well with hands to a smooth puree. 


Cook in little water or microwave 5-6 bimbul after cleaning and cutting them to rings till well done. Add this also to the brinjal and mash it together. Add a bit of water if necessary to make it to a good pouring thick consistency. 



Heat 2 tblsp of oil in a small pan, when hot add ½ tsp rai (sasam) when they splutter add 8-10 curry leaves, 1 tsp of hing powder, 4-5 green chillies chopped to pieces, fry a bit and add to the mashed brinjal-bimbul mixture. Add salt to taste. Serve with hot rice as a side dish.


** Bimbul is a sour Vegetable added to curries for sourness instead of tamarind etc. It is available in southern parts of India and grows in small trees in bunches. I am posting a picture of the bimbul also for those who are not aware of the same.
