Spicy Idly made from Urad Dal + Moong Dal + Rava Served with Sambar and Special Dry Fruit Green Chutney ......... :)
Wash and soak 1 cup Urad dal and 1 cup Moong dal separately for 2-3 hrs. Add 1 tsp Methi seeds to the moong dal while soaking. Drain well. Grind separately to a smooth paste and mix the two together.
Take 1 cup of Bombay Rava wrap it in a muslin cloth and steam for 15 minutes. Cool it completely and remove lumps if any. (You can even Micro Wave the rava for about 2-3 minutes and cool it). Mix the rava with the urad + moong dal batter add some grated ginger and 4-5 crushed green chillies. Add salt and mix the batter well. Leave overnight.
Next day apply oil to the Idly moulds. Add in the prepared batter to ¾ level in all the molds and steam in a Idly steamer for 20-25 minutes. Remove, cool a bit, run a blunt knife through the inner surface of the mould and unmould the idlies gently. Serve hot with sambar/chutney or any curry of your choice.
** Note : I used wet grinder for grinding of the Urad dal, but ground moong dal in mixer grinder and then added them. If you are using mixer grinder for grinding of urad dal too, then add only 3/4 cup of rava or else the Idly may become hard. Also steaming of rava is must.
