Yummilicious ...
** Kali Tori/ Black Pigeon Peas are available almost everywhere in southern stores. We get them even in slightly reddish tinge and white ones too. The black ones are tastiest and used the most in GSB Konkani Saraswat Community. These are sun dried peas and need to be soaked before cooking into dishes. Again, since they are slightly sweeter in taste by nature they have a tendency of being spoilt soon, so be careful on purchase and storing them. In Mumbai we get it in Mangalore Stores and I always purchase them and prepare these dishes as they taste simply awesome.
** There are a few methods in which we GSB Konkani Saraswat cook legume dishes. There is "Saar- Upkari" which is a single dish prepared by cooking legumes/ pulses/ beans to soft mushy consistency, bringing it to curry consistency, seasoning it with either mustard seeds- curry leaves- hing or with garlic seasoning. Again the same after cooking (not mushy) the legumes is prepared as upkari/ bhaji suing only the cooked legumes and the cooked water into saaru/ saar both of which again can be seasoned with either mustard seeds- curry leaves- hing or with garlic seasoning
** Again, there are curries which are prepared using legumes/ pulses/ beans with inclusion of any tuber veggie/ brine items etc. and ground masala to which again the seasoning can be done either with mustard seeds- curry leaves or with garlic seasoning referred to as Gashi and Koddel while Ambat is curry to which onion seasoning is done. Well, to the naked eyes many a times the masala looks similar, however, the method varies and so does tempering which infuses its own flavor to the curry making the distinguish between the prepared curries, I guess you need to savor to know more.

After 10 years of Blogging I felt it necessary to re-write the same in detail to the best of my knowledge. While I have re-edited many recipes in the same page again, some I have prepared into a new post and one of them is this post.
