Chilled Chickoo Sabudana Kheer garnished with Almonds & pistas.
Soak ½ cup of Sabudana in 1 cup of water for an hour. Cook in the same water adding 1 cup of thick milk till the sabudana swells and gets properly cooked.
Add ½ to ¾ th cup of Sugar (you can add more if you wish depends on both the sweetness of the chickoo and your liking) and mix well. Cool completely.
Now wash, wipe well and grind 8-10 medium sized chickoos with skin (but remove the seeds and the centre white sticky flesh) to a very fine paste.
Add this to the Sabudana mixture. Garnish with plenty of chopped Almonds and pista. Serve Chilled.
Note :: This dish has to be consumed within 3-4 hrs. or else it goes sour.
