Kokum Kadhi / Sol Kadhi
Soak 15 pieces of semi dried kokum in 2 glasses of lukewarm water for 2-3 hrs. Strain and keep aside.
Soak 2 cups of fresh grated coconut in 6 glasses of lukewarm water for 15 minutes, then grind it with 4-5 green chillies and 12-15 garlic cloves to a fine paste.
Remove and strain through a fine sieve / muslin cloth. Add in the kokum water, salt and mix well.
Add water to make around 8-10 glasses of kokum kadhi. Garnish with coriander leaves.
Serve kokum kadhi fresh with any meal. You can keep it in the fridge for a day only. It usually does not remain fresh after that.
