Masala Egg Omelette.


Masala Egg Omelette ... Eggs in any form are a favorite in my home be it for breakfast, lunch or dinner, also they can be prepared in a jiffy ... This is my very own recipe that is almost 25 yrs  old and that which is still in demand and running strong in my home ... I usually prepare this one either for lunch or dinner as it is quite filling on tummy ... Tastes awesome when served with bread slices and a dash of tomato ketchup ... Yummilicious ...

** Eggs are by far the best and healthiest among the few foods that could be classified as “super foods.” You can call them powerhouses of nutrition, packed with protein and a range of 18 vitamins and minerals. They are low in calories too. Besides nutrients, a boiled egg is about 77 in calories, having 6 grams of protein and 5 grams of healthy fats. That is why a boiled egg can be safely considered a perfect one for diet. However, there is debate on the cholesterol content in the yolk (the yellow part) of an egg. While some feel that it raises the cholesterol levels in a person, other’s feel that though Eggs are high in cholesterol, eating eggs does not have adverse effects on cholesterol in the blood for the majority of people. So it is best left to individual judgment and Doctor’s advice regarding the same if someone has major health issues and are advised against consumption of the same. Having said that Eggs are very versatile while cooking. They adapt and fit well with any of the dishes you add them to. There thousands of ways and means by which an egg can be used and prepared. From omelettes to curry to baking, eggs are used in most of the dishes. They give body and bounce to many dishes. 

** For today I am sharing with all of you one of my favorite omelette; my own recipe which I tried about 25 yrs back and it is still running strong by demand in my home. This omelette takes some time in preparation as we have prepare some masala with addition of onions and tomato allow it to cool and then add on to the beaten eggs and further prepared into omelette. But trust me, it tastes simply delicious and even after so many years some of my friends who loved them ask me to prepare it for them and we all enjoy the same together. Life really rolls fast, it was just the other day that I had mastered this omelette after a few trials. The first few times though the tastes was excellent there were a few hitches, like the omelette would break when flipped over etc. This is so coz. the ingredients mixed in the prepared masala are heavy and when you flip it over it is difficult to hold the same by spatula and so it tends to break. Well I am not the one to give up and end up with my own tips and tricks to do so and achieve results. So finally it was done and I have never changed a iota of the recipe in almost 3 decades coz. it is simply tasty and perfect.

** Here is the simple method for "Masala Egg Omelette" ... My own Recipe ...  

** You will need about 2-3 large sized fresh eggs for 2 servings of this omelette. 


** For the preparation of Masala : Heat 2 tblsp oil + 1 tsp ghee in a thick bottomed kadai. When hot lower the heat to medium and add in a few curry leaves (kadipatta/karbev) chopped finely followed by 2 medium sized onions (piyav/kanda) chopped finely and fry till they turn translucent. Be careful with heat level and do not burn the onions, you can lower the heat too.

** Now add in 4-5 finely chopped garlic (losun) and further fry till both the onion and garlic (losun) turn slightly brownish in colour. Add in ½ inch grated ginger (alle'/adrak) and 1-2 finely chopped green chillies (tarni mirsanga/hirvi mirchi), 1/2 tsp haldi (turmeric) powder, 1 tsp jeera (cumin) powder, 2 tsp dhania (coriander) powder, ½ tsp garam masala powder, ½ tsp fennel (badisep/saunf) powder, 1 tsp red chilly (mirchi) powder, ½ tsp crushed pepper (miri) powder and fry well on low heat.

** sprinkle some water if necessary only ie. if you find that the masala is getting burnt. Now add in 2 small or 1 big tomato cut into small pieces and fry well on medium heat till well cooked and done. Add salt to taste and a handful of finely chopped coriander leaves and mix well. Remove from heat and let it cool completely.

** Note : The prepared masala should be thoroughly cooled before adding it to the beaten eggs or else the eggs will curdle up and the omelette will not turn out good. So don't rush things here. If need be spread it on a plate and leave it to cool under a running fan for quicker cooling. 

** Meanwhile, beat 2-3 large sized eggs and keep it ready. Remember to use fresh eggs always, in case they are kept in fridge, keep them at room temperature for 15 minutes before you proceed with the beating of the same.

** When the masala has completely cooled down add it to the beaten eggs and mix well. Now heat a small non stick tawa / girdle / pan and apply a thin film of oil or ghee and then add in half of mixed batter and spread it to make an nice oval omelette.  Add some ghee around it and fry it till it is cooked on the bottom side then gently flip over and cook the other side too. Remove and keep aside. Make another similar omelette of the remaining batter.

** "Masala Egg Omelette" is done and ready to be served. Always serve omelette hot from tava with bread slices and some tomato ketchup. They taste best that way and there is absolutely no need of serving anything else as accompaniment with this except some beverage of your choice. Do try this delicious omelette and Enjoy with your family and friends. Children are sure to love these and they are full of protein and nutritious too. If you eat eggs then I suggest that you must try out this omelette, your family is sure to love it.

** Note : Till you are experienced in removing this omelette properly as it thick in texture, I suggest you remove small sized ones as they are easy to flip over lest then break up on doing so. You can always make small bun sized omelettes and place them in between along with an application of ketchup, coriander chutney and a slice of cheese and serve like a burger it tastes awesome. I serve this as burger or as a sandwich too at times.

** Note : I have made a few more mix and match with this particular masala egg omelette which I will post soon, till then enjoy this one with your family and friends and do give me a feed back if possible.
