Sweet Corn Crab Soup

"Sweet Corn Crab Soup" ... A delicious steaming hot soup with the goodness of crab that is a delight to relish during winter to get body warmed up and induce a tight sleep ... Yummilicious ......

** I have nostalgic memories of sweet corn soup with addition of crab flesh pieces which I love to date. I have relished this through my childhood in some of the famous restaurants in Mangalore which was a vogue those days. Those days going out for dinner to restaurants was something we children looked up to as we rarely did so. Being a large joint family it was not feasible for us, but my dear Father saw to it that he took us out for dinner to the best hotel at least 2-3 times a year and I simply loved having this soup and butter chicken with naan another favorite dish of mine. My father never distinguished or should I say never ever resented the fact that he had only girl children, that too all six of us back to back. We were raised giving equal opportunities that which my cousins who were boys got. He saw to it that all of us were given the best of education available at good institute and never thought of getting us married off before completion of our degree education which was a norm those days. All of us siblings will always be thankful to his vision of having a girl child educated too.

** Are you wondering why I am writing about gender here or why am I thankful to my father, well you have to be in my shoes to understand that. Those days a girl child hardly had freedom to choose anything much and were married off the minute they turned 18 yrs, that too because that was a government rule which they had to abide by. My father to my mother's dismay disagreed and saw to it that we pursued our education and learnt what we aspired for and only then got us married and settled. Many off my cousins were married before completion of degree and my mother always worried about this fact and kept asking my father to look out for proper proposals, but he flatly refused saying he wanted to give us sound education so that we could stand on our own feet, rely on our knowledge and lead a life of dignity always. He has been my mentor and guide as I joined him in his business on passing out of college and I learnt the norms of running business from him coz. of which today hubby and me have a successful business of our own. I always hope we have made him proud of us for all the sacrifices he gave for our sake.

** Coming to the Soup part, though many of my sisters preferred to place an order for tomato soup which had those bread croutons floating on top, which we all shared in 1 by 2, I always insisted I wanted sweet corn soup either with crab or chicken which somehow was not liked by other family members. Being the youngest in the home, I always had my way and would not relent and someone in the family had to adjust with me by sharing the same, even if they did not like it much. But I just had to have it as I loved those crab or chicken pieces added on into the sweet corn soup. I must say here that I did enjoy the perks of being the youngest in the family. But I don't think anyone minded it that much coz. I was always pampered and I don't remember a single day during my childhood getting scoldings or beating for misbehaving or anything whatsoever. I always am thankful to my family for giving me such a lovely childhood that I grew up without any hurtful incidences. We all grew up with love and knew not any rivalry or hatred those days unlike now what I see happening. Nuclear families tend to bring in self centerdness in a person I guess which we did not know off.

** Here is my "Simple Sweet Corn Crab Soup" Recipe .... My Style ...

** In 2 cups of water boil ½ cup of corn kernels or crushed kernels + ½ cup of fresh green peas + ½ cup of carrot cubes + ½ cup spring onions (I did not have spring onions so I added just one small onion chopped).

** When the veggies are ¾ cooked add in 1 tblsp cornflour mixed in water. Never add in cornflour directly to hot soup, you have to mix it in half a cup of water till lump free and then add on to the soup. Keep stirring the soup till it thickens.

** Now add in 1 beaten egg in a stream through a 6-8 inch height while you keep stirring the soup to get a flaky effect. Add in crushed pepper powder, salt to taste and 2-3 crab stick-chopped to pieces. I have used the ready made crab flesh sticks available in Mumbai, You can also add in fresh flesh pieces from the large claws of crabs.

** "Simple Sweet Corn Crab Soup" is done and ready to be served. Remove from fire and serve steaming hot with soya sauce, green chillies in vinegar and Red chilly sauce as accompaniments. Do try out this simple delicious soup and enjoy with your family and friends specially during winter season when its cold out there.

** Note : If crab flesh sticks or crabs are not available in your vicinity, you can also add in cooked chicken flakes / pieces to the soup and it taste simply awesome too. You can also add on prawns or any other ingredient of your choice.
