Nachani is the highest in calcium and I try preparing our own amchi dishes with it giving a slight twist ... after all necessity is the mother of invention ... Yummilicious ……
** Sanna Polo as side dish for lunch is one our most favorite dish at home, not only is it tasty but can be prepared in various combination each time giving it a different taste and outcome. I have been posting this so many times each time giving a simple twist to the dish that by now all my Blog followers know is a spicy dosa to which finely chopped veggies are added or ground with and are served as a side dish along with dal-chawal or any other dishes for lunch/dinner. Well, I do not want to bore you all with the same details over and over again, so I think it would just be wise to move on to the recipe, also I am posting a common link to all the sanna polo posted in the blog before, all you need to do is just click on that link and they will all appear on a row, then choose that which would love to try and go ahead, prepare it, relish it with family and friends, you can carry this in your lunch box to office or your work place too.
** Nachani ie Finger Millet/ Ragi is loaded with Calcium, and I think is one of the highest source of the same too. As we age, though we do eat nutritious food, somehow our test always end up showing some ups and downs, this causes panic and we reach out to supplements, over the counter medicines etc. Never take any pill without proper consultation from Doctors and if need be take a second opinion to clear all doubts after all its our life. Nobody has the patience now to sit and explain in detail or attend to our issues, sometime medicines are just given randomly and it is we who end up with severe consequences. It is always wise to take out some time and learn more on our own food ingredients from our kitchen that have immense health benefits and are also harmless specially so when prepared at home, so go for it and give your family the best.
** Here is my simple method of preparing Instant "Nachani- Cabbage- Onion Sanna Polo/ A spicy dosa with Finger Millet/ Ragi" that is not only tasty but healthy too … My Style …
** Ingredients :
Cabbage : 1 heaped cup finely chopped.
Onion/ Piyavu/ Kanda : 1 large sized finely chopped.
Nachani/ Finger Millet/ Ragi Flour : 1 cup (approximately)
Bengal Gram Flour/ Besan : 2 tblsp
Rice Flour/ Tandla Pitti/ Chawal ka Atta : 1 tblsp
Curds/ Dahi : 3 tblsp
OR
Tamarind/ Chinchama/ Imy paste : 1 tsp
Kashmiri Red Chilly Powder/ Mirsange Pitti/ Mirchi Powder : 2 tblsp
Hing/ Asafoetida Powder : 1 tsp
Salt to taste/ Namak Swad anusar / meeta
** Oil as required for frying the sanna polo/dosa.
** In a large bowl add in finely chopped cabbage, onion, salt to taste, hing powder, tamarind or curds whichever you are using along with chilly powder and mix well. Now add in rice flour and besan and mix well adding half to one cup of water. Lastly add in half of the nachani flour and mix well and then keep adding and mixing until you get a soft thick mixture similar to that of bhakri.
** Note : First add in all the ingredients and mix well and then keep adding nachani flour and water till you get the right consistency. If you add all at the same time, you may end up either getting a thinner textured mixture. However if the mixture is too thin, you can add in some more of the flour and adjust accordingly.
** Keep the prepared mixture aside covered for 15-20 minutes. It is very important to do so to get soft textured sanna polos. Nachani absorbs a lot of water, so if you do not give it a resting period before preparing the polo, then once done and kept aside it will turn brittle. Once it has rested for 20 minutes, check the mixture and add in water if too dry or flour if too thin. Mix well and the batter is ready to be prepared into sanna polos.
** Heat a iron tava/pan to smoking point and then lower the heat, apply some oil on the tava, then take a handful of the mixture, roll it into a ball loosely, put it on the tava and press it down to pat it equally to form a small round dosa. You can put about 4-5 small dosas at a time on the tava depending on the size of the tava. .Add some drops of oil on outer sides of the dosa and a few on top of it and let cook on medium to low flame.
** Note : You can dip you palms in water if necessary, which will help you to pat it conveniently but be careful as the tava will be hot. If not comfortable, use the back of a greased flat vati or tumbler to pat the dosa down evenly. You can check out pictures shared in other sanna polo recipes to which I am sharing a link below, to get a fair idea of preparation of this dish.
** Note : I use a non-stick tava which has seven dents in it and they hold the dosas in shape equally of same size. You can purchase this from the market as it is readily available. You can check out the photo in the link given at the bottom of this recipe.
** Once the bottom side of the dosa is cooked gently loosen it through the sides with a flat dosa spatula and flip it over to cook the top portion of the dosa. When done remove and keep it aside on a plate and continue preparing sanna polo in similar pattern until you have finished off all the mixture or the required number of dosas. You can keep the excess mixture immediately after prepared in air tight box in the fridge and use it on later too.

This spicy dosa tastes best when served with rice and dal/saar along with other dishes, but tastes equally good served with any other masala dishes too of your choice. Do try out this delicious spicy sanna polo and enjoy with your family and friends. You can cut down the spice level if you have young children or aged people in your home or you can increase the same if you want it spicier.
