Spicy Cucumber Corn Salad with a dash of lime .........
Cucumber corn salad is a very healthy salad, good for diet and patients too. Enjoy this salad when corn is plenty in season.
For the preparation of Salad : Peel off the skin of 3-4 medium sized cucumber and chop them to fine pieces and keep aside ready. Remove the corn kernels from the corn cob and clean them well. Wash them and drain well. Microwave it for 2-3 minutes and allow to cool.
Add the cucumber and corn kernels in a large vessel. Add 2-3 finely chopped green chillies, salt to taste and mix well. Keep this aside ready.
For Tempering : Heat 1 tsp oil in a small pan, when hot add in ½ tsp of urad dal and when the colour changes slightly, add in ½ tsp of jeera and ½ tsp of rai (Sasam), fry for a minute and add 1 tsp of hing powder and 5-6 curry leaves and continue frying for a minute or two. Remove and pour over the cucumber corn salad.
Mix the salad well. Add a tsp of freshly squeezed lemon juice to the same. Serve the salad immediately or keep it in the fridge if you want to serve it chilled later on.
