Vermicelli~Carrot Payasam/ Kheer.


"Vermicelli~Carrot Payasam/ Kheer" ... when your mind is at peace, you need to thank God in your own way ... sharing my Naivedyam/ Prasadam with all my friends here ... a simple vermicelli kheer (godshe') that tastes great with addition of gajar which are still plenty in season now ... Stay Blessed~ Spread Happiness ….. 

** Vermicelli Payasam/ Kheer is the easiest of all payasams that can be prepared in no time if you have all the ingredients at home. Well, vermicelli is always there in stock in my home and it is one of my trusted old dish that comes to rescue in case of emergencies just like our good old sheera. These are two desserts that are not only reliable to be prepared at the last moment but turn out perfect each time without any hazels. The added bonus about vermicelli is for over a decade now you get roasted ones which means that work load too is cut down, if you have not tried it, purchase it today, they are available in all leading stores. This not only cuts down on the amount of ghee required for otherwise frying but also cuts down on time as all you need to do is just fry it for a minute or two in ghee and go ahead with preparations. Trust me a healthier version of payasam is ready within no time that not only gives you spare time to prepare other dishes or to get ready yourself before your guest arrive. 

** Sometimes, there comes a period in your life when you just don't what has gone wrong, but it seems anything you do turns out topsy turvy leading to building up of tension. And then when things settle down and you are at peace, you really feel bounced back with energy and life becomes that much more beautiful. I have always loved preparing Naivedyam to my home deities more so when the occasion comes when I want to thank God for always being with me through my hard times and putting me back in shape. The little problems are always there, but turning in to little bit of spiritualism by reading more, meditating and praying on daily basis has somehow brought in peace of mind. Hard times comes to all, but with faith and devotion, you can sail through them and that is what matters the most. Here is a simple Naivedyam offering I prepared today, as it is also Ekadashi. I have added on carrots to bring in a twist in taste to the normal payasam and it tastes wonderful. 


** Here is my simple recipe for "Vermicelli~Carrot Payasam/ Kheer” … My Style ....

** Peel off the skin of one large sized "Carrot/ Gajar", grate it and keep it ready aside. 

** Bring ½ liter of full fat Milk/ Doodh (you can use skimmed milk too) to boil, lower the heat and simmer it for about 5 minutes. Keep it simmering on low heat aside while you go ahead with the remaining preparations. 

** In a thick bottomed kadai add 1-2 tblsp of fresh homemade Ghee/ Toop. When it melts add in a few Cashew Nuts/ Kajjubi and fry till the color changes slightly. Now add a few Raisins/ Dry Grapes and Charoli and fry for anyother 1-2 minutes. Strain and remove from the kadai and keep it aside separately to be garnished later. 

** In the same Kadai add in 1 cup of "Vermicelli" and fry just for a minute if you have bought roasted ones or fry till slightly browned if you have bought the normal ones. Immediately add in grated carrots and continue to fry both together for another few minutes. 

** Now add in the simmering milk gently into the vessel. Be careful and pour slowly through the sides as it may splutter and fall on your hands. Once all the milk has been added in mix all together and bring to a full boil. Add in a few stands of "Saffron/ Kesar" or a pinch of yellow edible color. 

** Lower the heat to medium, mix well and keep stirring to avoid the ingredients from getting burnt at the bottom add cook till the vermicelli is cooked properly. They thicken up on cooking and the carrots too will be done as they hardly take much time. 

** Now add 1 to 1.5 cups of "Sugar/ Shakkar" (plus or minus as per individual taste) and mix well till the sugar gets melted. Continue simmering for another 5-10 minutes, till the payasam is well done and turns thicker in texture. Remove from fire and keep it aside. 

** Now add in the fried and kept aside cashew nuts, charoli and raisins along with 1-2 tblsp of "Slivered Almonds/ Badam". Add ½ tsp of cardamom powder and mix well. Cover the dish with a tight lid and keep it aside for 15-20 minutes for the kheer to settle down and turn fragrant. 

** "Vermicelli~Carrot Payasam/ Kheer” is done and ready to be offered to God as Naivedyam and thereby distributed amongst family and friends. This is delicious payasam/ kheer that is almost loved by all be it Young and Old members of the family not to mention children who always demand more of it. So do give this new version a try and have a lovely time relishing it with family. 

** Note : You can serve this Payasam/ Kheer hot or cold as per your liking. But my suggestion would be to serve medium hot as dessert after meal as it tastes best that way, though the same depends on your family. Children love sweet dishes and will love this dry fruit topped kheer very much for sure. 

** Note : If you find that the Payasam has thickened too much, you can always add in hot water or hot milk and mix well again. Most of the time it does thicken up on cooling down, so keep it a little thinner in the initial stage or add on milk / water later on.
