Rice Shevai (Idiyappam/String Hoppers) in Sweet Strawberry-Coconut Milk.

"Homemade Rice Shevai (Idiyappam/String Hoppers) dunked in Sweet Fresh Strawberry-Coconut Milk" ... Tried giving a twist to our very own Amchi shevai in godu narla rosu with addition of fresh strawberries that are plenty in season now ... Tastes delicious ... Enjoy Christmas with this yummy dessert and Stay Blessed ... Strawberrilicious ....

** Shevai or Sevaiyan are also known as Idiyappam down South ie southern parts of India and as string hoppers elsewhere round the globe. These are prepared both fresh and out of sun dried ones depending upon the type of requirement for that particular dish. Rice shevai is a common dish for breakfast in Konkani Saraswat’s / amchies home served topped with coconut oil and any side dish like pickle, molaga podi, chutney but the best combo is with batate songa another famous amchi dish. The combo is awesome one and is a hit in all homes while non-vegetarians also love it with some spicy chicken or fish curries too. I have posted a few combos before and so have I written a whole article with explanation on shevai. So I will not be repeating the same again and will share the link to the preparation at the bottom of this recipe. Do go through the link if you need the recipe of shevai with Ukda rice ie white boiled rice. Shevai can be prepared with both ukda (boiled rice) rice and normal surti kolam rice too, so can it be prepared with many other types of lentils. But in case of preparing the same with rice a little bit of freshly grated coconut is added on while grinding. Again it can be prepared in 1:1 proportion of boiled rice and normal rice too. I always prefer the one with white ukda / boiled rice as there is absolutely no need of addition of coconut while preparing with the same. But I will surely make it a point to prepare and add in the other methods of preparations too very soon with ordinary rice as well as other lentils.

** Godu narla rosu as called in Konkani is actually sweet coconut milk which is prepared in Konkani Saraswat homes and in which fruits or shevai are dunked in and served as a dessert after lunch. Shevai can be served in many ways, like by preparing upma ie addition of seasoning, then there is the addition of churan, a sweet jaggery mixture and many more styles in each home in their own way. I have somehow not posted the most common that is with godu narla rosu / sweet coconut milk before and will do so soon, somehow I have forgotten to click the same before as I prepare the same rerely. However, today I gave a gentle twist to this same sweet coconut milk with addition of fresh strawberries, my very own concoction, and it was simply wonderful. For sweet coconut milk, usually jaggery is added and mixed in to the fresh coconut milk prepared out of freshly grated coconut, but today in order to retain the color and the flavor I added on sugar to the freshly grated coconut milk and it turned out beautiful and delicious in taste. I myself was surprised with the result when I tasted the chilled dunked shevai right out of the fridge. So the next time you prepare Shevai / Idiyappam for bf. Do keep aside a few and prepare this delicious creamy sweet coconut milk with fresh strawberries when in season and enjoy as a dessert with your family and friends.

** Here is the simple method of preparing "Homemade Rice Shevai (Idiyappam/String Hoppers) dunked in Sweet Fresh Strawberry-Coconut Milk" … My Style ….

** For the Preparation of Sweet Fresh Strawberry-Coconut Milk :
Thick Coconut Milk : 200-300 ml.
Sugar / Shakkar : 200 gms.
Fresh Strawberries : 12-15 large sized.
Strawberry Colour : a few drops (Optional)

** For the Preparation of Ukda Rice Shevai (Idiyappam/String Hoppers)": Please go through the link given at the bottom of this recipe. You will need about 300-400 gms of the same.

** For preparation of Coconut Milk : Soak about 3 heaped cups (white upper part of one whole coconut / vaileechi soyi) of freshly grated coconut in 4-5 cups of hot water, cover and keep aside for 20 minutes. Now put it in a grinder and grind to a very smooth paste, the paste should be ground to a very fine paste.

** Remove and strain the coconut paste through a thin muslin/cotton cloth. The coconut milk obtained is Thick Coconut Milk No.1. Now put back the strained residue into the mixer grinder along with another one or two cups of water and grind well. Again strain the same through muslin cloth. The coconut milk obtained is Thin Coconut Milk No.2. Keep both the milk ready separately.

** Note : For straining of coconut milk always use fine muslin/cotton cloth and do not use the stainless steel sieve as much as possible. The result obtained while strained using cloth is not achieved when done using normal steel sieves.

** Clean, wash and wipe dry the strawberries. Slice off the stem portion and cut into chunks about 10-12 fresh strawberries. Cut the remaining strawberries into small sized cubes for garnishing. Keep them both ready separately aside.

** In a mixer grinder add in the thick coconut milk no.1 along with the sugar and run the mixer till all the sugar has mixed in well with the same. Now add in the strawberries cut into chunks and continue to grind in the mixer till they are coarsely ground. If using color add it now. Remove and add this into a stainless steel vessel.

** Add in the thin coconut milk 2 into the mixer grinder and just run it in the mixer for a minute to mix in with whatever little bit of paste has remained over. Remove and add this to the previous strawberry coconut milk and mix both of them well together. Add in the strawberries cut into small pieces and kept aside for garnishing too and mix well. In all you should have about 700 ml of the mixture.

** Note : You can also use store bought coconut milk for this recipe if you find the method of preparing the same tedious or for any reason it is more convenient to you. I do so many times when I am short of time as we do get good ones in stores. But just see to it that the packed product is fresh and not outdated. Also taste a drop of the same before you add on the ingredients to be sure that it has not turned out sour.

** Sweet Fresh Strawberry-Coconut Milk is done and ready to be added into shevai. Add in about 300-400 grms of freshly prepared rice shevai to this mixture after coarsely crumbling them. Mix well and put the vessel tightly covered in fridge to get well chilled. This dish tastes best when served chilled, so always serve them that way in cups/bowls.

** "Homemade Rice Shevai (Idiyappam/String Hoppers) dunked in Sweet Fresh Strawberry-Coconut Milk" is chilled and ready to be served. Serve them always chilled in bowls as dessert after lunch/dinner to your family and friends and surprise them with this new twist in preparation of flavored coconut milk.

** Konkani Saraswat’s who always serve with normal jaggery sweetened coconut milk will for sure love this twist, so do try it out and relish the same, your kids are sure to love it better than the normal ones as children always love strawberries and they are healthier too. This is another best way to make children and teenagers eat fruits, which they are always reluctant to do so.

** You can prepare and keep this dish overnight in fridge for being chilled and serve them for parties and get together. Try serving it to children at parties as a surprisingly new item instead of the same old Ice Creams and Cream filled desserts. Healthier change should always be tried, you never know what will click with children, Isn't it? so no harm in trying.
