Green Peas (Vatana) Pulav~2.


“Green Peas (Vatana) Pulav~2” … simple no onion- no garlic pulav (spiced rice) that can be served with any dish of your choice … Yummilicious ….

** This is a simple pulav/ spiced rice also known as Jain Peas Pulav as it does not include onions and garlic. I prepare this quite often with addition of just whole garam masala and green peas/ vatana when in season. Sometimes I do add on cauliflower florets, but then many a times when for any reason I want to prepare no onion no garlic dishes and want to prepare rice, in my home we prepare this simple pulav that tastes awesome with any raita/ curd salad. Addition of cashew nuts enhances the taste especially if you have children at home as they like to pick them out to eat but this time I have kept it simple and served with strawberry carrot raita which I had spiced increasing the addition of green chillies to get along with this rice dish. Do try this one out as Vatana/ green peas are in season now and they are tasty too.

** Here is my simple recipe for “Green Peas (Vatana) Pulav” … I have posted this many times before too, just with slight variations … I am sharing a common link to the same below this recipe, you may choose and follow any recipe that you and your family prefer to relish ….

** Wash thrice well and soak 2 cups of Jeera/ Basmati rice in plenty of water for 30 minutes. Drain off all water and rinse properly and then put it in a colander and keep it aside for the excess water to get drained off. Prepare and keep this ready aside.

** Shell, pick and rinse about one cup of fresh green peas/ vatana and keep aside ready. I have used fresh ones as they are in season now, you can use frozen peas too.

** In a pressure cooker pan heat about 3 tblsp of ghee/ oil whichever you prefer. When hot, lower the heat and add in 1 tsp of jeera (cumin seeds), ½ tsp of miri (pepper corns), 7-8 lavang (cloves), 2-3 slit ellaichi (green cardamoms), 2 slit black cardamoms, 2-3 pieces of 2 inch pieces of tike sal (cinnamon), 2 star anise, 2 bay leaf, a little bit of jaivitri and fry for a few minutes.

** Now add in the drained rice, mix well and fry for another few minutes, say about 1-2 minutes. Just cover it with a lid and let cook on low heat for just a minute. Now add in the green peas, salt to taste and mix well. Add 3.5 cups of water, mix well and bring to a rolling boil partially covering the cooker.

** Once you see bubbles, lower the heat, fit in the cooker lid with the weight on and pressure cook on medium heat to two whistles. Remove and let the pressure fall on its own and when done and able to open the lid do so and allow to cool in the open undisturbed for 5 minutes. Do not immediately stir as the heat is high and the rice may get mashed up.

** “Green Peas (Vatana) Pulav” is done and ready to be served once it has slightly cooled. Do not allow to cool further, serve hot immediately with any side dish of your choice. Goes well with raita or any veg or non veg curries. This is one of our favorite simple spiced pulav which we love and is prepare quite often.
