Strawberry Godu Muddo/ Steamed Sweet Idly (Ramdan) with Roasted Melon Seeds.


"Strawberry Godu Muddo/ Steamed Sweet Idly (Ramdan) with Roasted Melon Seeds" ... No, its not cake, it is our own Amchi sweet Muddo with a twist ... I felt why should ponosu (ripe jackfruit) have all the fun every season ... tried out with strawberry and got it all blushed, beautiful, Spongy and Tasty ... the flavor was somehow lost on steaming, but otherwise the outcome was fantabulous ... I did not include any color as I do not like doing so, instead added on a small piece of beetroot while grinding the strawberries as they complement each other very well ... Yummilicious ...

** The season of Strawberries is nearing end, but here I have to mention that under the new scheme of farming unlike decades back now strawberries are grown in many places which was thought unknowingly unfit for strawberry cultivation. That is the very reason why India has seen a boom in strawberries this year and unlike before we could see loads of them being sold in markets in our cities too. We always got strawberries during season, but not sold in bulk and it surprised me to see them being sold in streets to by pushcart fruit vendors.

** It was only when I tried to find out elsewhere that I came across the subject of new strawberry cultivation methods that had yielded to this boom, Isn’t that amazing, the most loved heart shaped and colored fruit is now available at affordable prices to all and now my mind has started thinking of options of new variety of dishes to be prepared using this delicious tart- sweet fruit. I am sure I will prepare many delicacies in coming years with this fruit adapting it to our own Konkani Saraswat Cuisine, which is one of my favorite subjects.

** I believe some twists here are there will definitely give us fantastic results while keeping basic recipe intact, in case of which I am sure it will then appeal to young and old alike. Luckily, I always get encouragement from my hubby at home and friends in my food group KONKANI DELICACIES which keeps me motivated and on my toes despite having bad back pain to deal with. I definitely count this as my blessing as I always believe every person, be it a child or a teenager or elderly person always need motivation which is a blessing in disguise.

** I will not run into strawberry details or its nutrient levels etc. as I have written it elsewhere before in my previous posts, also everything is now at fingertips, you just ask Google Chacha and you get it, which is what I do when I come across new vocabularies or things, it’s simply fantastic. I have prepared this muddo/ sweet idly with rice rava/ idly rava easily available in stores following our same traditional recipe, which we use for ripe jackfruit or cucumbers. I will share a few links at the bottom of this recipe and you may check them out there.

** Long back, say about 4 years down the lane when I began my own food group KONKANI DELICACIES I wanted my first post to be something different. It was the season of cashew fruit and I had purchased some really good ones. So, I made my own innovation of preparing sweet muddo, a traditional sweet Idly from GSB’s with ripe cashew fruit and that had turned out fantastic too. You may browse through the post and give it a try too as in a few months we will be approaching cashew season, but till then you can try these out and relish with family.

** Another point I have to mention is that muddo can be prepared in different method meaning molds. Sometimes the name differs but the recipe remains same. Here I have prepared it in Ramdan format (as called in Konkani) steaming the mixture using a round 2-3 inch thickness flat bowl similar to cake tins. However, the same can be prepared and steamed in jackfruit leaves molds which we call khotto or as patholi in Turmeric leaves (haldi paana) or use Badam leaves/ Banana Leaves too or you can simply use Idly molds also.

** Preferring of any molds to prepare these muddo is personal choice or as per one’s convenience or availability in their home/ vicinity and I would like mention that the taste does not differ, except maybe in turmeric leaves, which I cannot say much off as they are not available now, but definitely it can be done. The common link shared includes all these various methods that every Konkani Saraswat knows of too, not that I have to mention it, but then I have done so for those novice or others who are not aware of the options.

** I have used roasted melon seeds here, which I did so using microwave oven, you can roast on kadai too on medium to low heat. Melon seeds are good for health and compliment well with strawberries and are easily available and I try including them a lot along with other dry fruits too. Having said that again it is a matter of choice, you can completely leave it out or you can even use cashew nuts which is again a favorite of all amchies worldwide. Cashew nuts will also give a great crunch so you can go for it if melon seeds are not available.

** For the preparation of "Strawberry Godu Muddo/ Steamed Sweet Idly (Ramdan) with Roasted Melon Seeds” … this is my very own concoction of recipe adapted from our own Konkani Sarawat Cuisine muddo recipes ….


** Add 1.5 to 2 cups of Idly rava/ rice rava into a bowl add about 5 cups of water and mix well, then allow to rest for 2-3 minutes. The rava will settle down and the water will float on top. Tilt the vessel and gently pour of all excess water as much as possible carefully. Cover and keep aside for 30 minutes while we go ahead with preparation of the other ingredients.

** Note : Idly Rava/ Rice Rava is easily available in store and I always use the same for all Idly type dishes. However, you can also use raw rice, by soaking and grinding coarsely in the same measurements. If using surti kollam soak for 2-3 hours and if using white ukda/ boiled rice then you will have to soak it for 6 hours. Rest method is the same to follow.

** Roast about 3-4 tablespoon of melon seeds on low heat till slightly browned, keep it aside to get cooled and used later on. You can use Microwave method too, which is what I follow for roasting of all types of seeds etc. Just place it on a glassware and run on high at intervals of 1-2 mins mixing in between till done, remove and let cool aside.

** Note : I use melon seeds as they are healthier option to cashew nuts and as we love having them with godshe/ payasm etc. so, I try avoiding them in muddo. These are easily available in stores and can be stored well in fridge for over a year. However, you can use cashew nuts too if desired as most Konkani Saraswats prefer them, just roast them in the same way and use.

** Wash, slice off the stem and chop roughly about 20-25 strawberries. Chop into small pieces about 5-6 strawberries and keep this separately aside to be added in after grinding which is optional. Put other pieces into mixer grinder along with a small 1 inch pieces of beetroot and grind to a smooth puree. Remove into a wide bowl and add the paste and the pieces.

** There are two options of adding in jaggery/ goda/ gud ... if it is in powder form you can add it on straight while grinding, if in brick form, you can cut it into small pieces and add on while grinding provided the jaggery contains no dust particles as is the case in some places.

** The other method if there are dust particle is to heat half a cup of water and add in about 1 cup of jaggery/ goda/ gud cut into pieces and melt it. Once it melts immediately, remove and sieve it through a small holed sieve, cool it and use it while grinding.

** Grind to a paste 1 cup of freshly grated coconut (soyi/ nariyal) with jaggery whichever method from above you follow. The paste need not be ground very fine but the jaggery should have mixed in well. Once ground remove and add it to the strawberry in the bowl and mix well. Add in the prepared and kept aside Idly rava/ rice rava along with a pinch of salt (meeta/ namak), roasted melon seeds keeping aside a few for garnishing later and mix all well together.

** Check out the consistency of the mixture. It really depends upon the Idly rava absorption of the same. The mixture should be that of rava bhakri consistency slightly loose textured what we say as pachpachi in konkani. So if you find that the mixture is thinner in quantity add in a little bit of rice rava and mix well or if too thick then add in a little bit of water and bring to the desired consistency. ** Put water in Pedava/ Idly steamer to the required level and keep it on high heat to let the water boil. Meanwhile apply melted ghee from within to a round stainless steel bowl with about 2-3 inches depth or a cake tin with about 6-8 inches of diameter. Sprinkle roasted melon seeds kept aside, add in the mixture/ batter and level with a spatula evenly.

** When the water comes to a boil, gently place the steel tin filled with mixture in it. Cover and then steam on high for 5 minutes, then lower the heat to minimum and further steam for another 15-20 or till done. Do not over steam as it will harden, usually it takes only 20 minutes in all for the said amount of mixture. Remove and let cool for about 10-15 minutes.

** Gently run a blunt knife through the rim of the inner side of the utensil and then place a plate on top and together invert it on a plate gently tapping the bottom. It will loosen and fall intact into the plate. Now cut into desired sizes and serve topped with melted ghee or fresh homemade butter, as it is sweet you do not need anything else to serve along with it.

** "Strawberry Godu Muddo/ Steamed Sweet Idly (Ramdan) with Roasted Melon Seeds” is done and ready to be served. Tastes best served topped with melted ghee/ toop or fresh homemade loni/ butter for evening tiffin when children came home hungry though you can serve it for morning breakfast too, if sweet dishes are liked in the morning. Do try this out, children love strawberries and are sure to like it as it is something different and above all healthier than cakes or other fast food dishes that they tend to long for.
