"Cool Cardamom Flavored Cashew Nut- Sesame Milk/ Tanda Ellaichiwala Kaju~ Til Doodh" ... my most favorite season of juices is slowly creeping in, the nights are cooler while by mid morning it is much warmer as some hot and humid too ... so, prepared a coolant with addition of both tilu and kaju for mid morning break, suitable for this particular weather ... Yummilicious .....
** Here is a coolant prepared today with sesame and cashew nuts put together with addition of sugar for taste and cardamom for flavor. The same can be prepared with jaggery too, in fact with addition of jaggery the milk extracted become tastier and healthier as it has iron content which makes it that much more healthier. I have already prepared and posted a few sesame extract milks in the blog before. Sesame is high in calcium content and I love including it to my diet as it is very important to include them once you advance in age. In addition, the weather has also slowly begun to warm up and now more juices and coolants will be included as cool drinks are my most favorite and I love trying out various combos with them. I will not explain more about the ingredients as all are well versed about them, or you can also use Google search for the same. I am sharing link below through which you can learn more preparation out of sesame and try them in your home to be relished with family and friends. The sugar content is slightly more in these drinks so go easy on them and do query with your Dr. if you have any ailments or are diabetic patient, as though the drink on the whole is a good energetic and nutrient one, it does contain sugar too and if you have been advised against using the same, then it is better to be careful. ** Here is my simple recipe for "Cool Cardamom Flavored Cashew Nut- Sesame Milk/ Tanda Ellaichiwala Kaju~ Til Doodh" .... My Own Style ......
** Ingredients :
White Til / Sesame : 1 cup
Cashew Nuts/ Kajjubi : ½ cup
Sugar : 1 cup (I used sugar)
OR
Grated Jaggery / gud : 150 gms.
Cardamom/ Ellaichi/ Yellu Powder : 1 tsp
Water : as required. (Approximately 1 liter)
** Warning : If you are having any health issues please do consult your family physician before enjoying this drink as it contains sugar.
** Wash and drain well the sesame/white til after picking them to clean, if there are any dirt particles. Drain well and put them in a bowl along with cashew nuts and 2 cups of hot water and keep it aside covered for about 2 hours.
** Note : I used white polished Til/Sesame which are available in plenty during Sankranthi festival which falls during the month of January as it is a tradition to prepare chikki or any other items using til as offering to God for Naivedyam. I purchase the same and store in fridge which lasts me for over 5-6 months. These are clean and clear and you can use them as it is either roasted or soaked.
** Put the soaked Sesame and Cashew Nuts into a mixer grinder along with the water in which it is soaked and 1 more cup of water and grind all to a very smooth paste. Once it is smooth, enough add in the sugar and continue till all are well blended into a smooth paste. The paste should be ground really into a very fine paste to avoid unnecessary wastage.
** Note : If you do not want to use sugar, you can also add grated jaggery/ gud/ goda also while grinding, in which case the colour of the drink will be slightly yellowish/ brownish. Addition of Jaggery is much more healthy as it increases the Iron content in the drink and I usually do prepare it with the same, however, today to retain the colour, so I have used sugar.
** Remove and add another cup of water to the paste and mix well. Strain the paste through a fine sieve into a large bowl. Now put back the strained residue in the sieve into the mixer grinder again along with another cup of water and grind again for another few minute and strain the same into the same bowl containing the previous strained milk.
** Add in more water only if necessary, along with cardamom powder and mix well. In all you will get about a liter of juice out of the above mentioned quantity. Put it in the fridge overnight or for 4-6 six hours and chill. In case you want to serve this immediately use chilled water or crushed ice once the paste is ground fine and when you have to further add water.
** Note : Do not discard the residue obtained while straining the paste on the second time if any. You can prepare yummy dishes with the same as it is filled with fiber and nutrients. I prepare using them many items. You can add them while kneading the atta / flour and prepare roti / poori out of the same. So Just put it in an airtight dabba / box and keep it in the fridge for later use.
** "Cool Cardamom Flavored Cashew Nut- Sesame Milk/ Tanda Ellaichiwala Kaju~ Til Doodh" is done and ready to be served. Here is something different and healthier to be sipped on for a change instead of the boring cold drinks. If you do not want to prepare Thandai, for Holi festival which is fast approaching, you can try this one out and enjoy with your family and friends.
** This is a very healthy drink for growing up children, make it a habit to make them have these on weekends when its holidays and they always ask for food, that way you will be making a good food habit with your children which will last them for lifetime. Remember all good thinks starts from home and the onus is on each one of us to do it.
