Kuve Pitta- Kesari Doodh/ Arrowroot Saffron Milk.


"Kuve Pitta- Kesari Doodh/ Arrowroot Saffron Milk" ... frankly "kuve pitta" is the one I have placed in the picture below and is not arrowroot as some people mention it as ... I have no knowledge what it is called in English ... here is a lovely drink that cools the body from within if there is excess heat ... Yummilicious ..

** “Kuve Pitta” is a Konkani word used for a starchy type powder obtained from root of veggie that of which I am not sure what the name in English is. In the picture you can see the powder kept beside the coolant along with saffron. This powder is supposed to be a coolant for body heat and is prepared into duddali, a soft texture burfi sort of dish and a few other dishes too, by Konkani Saraswat’s and South Indians. I have posted a few flavored duddali posts before for which I will share the link below and you can browse through for more info. Again, I want to clarify here that it is not arrowroot powder that is easily available in the market, and many do refer to it as the same as they is a very close resemblance in components. Coming to this drink my grandmother used to drink it as it is mixed in plain water with sugar, as she had acidity problems and this one is really supposed to be a good healing coolant. I have however given my own twist and prepared it with addition of saffron infused milk and I must say it tastes delicious. ** Here is my simple method of preparing "Kuve Pitta- Kesari Doodh/ Arrowroot Saffron Milk" … My Style … 

** Add 2 heaped tablespoon of Kuve Pitta to 5-6 glasses of clean water, mix well and keep it covered aside for 2 hours untouched. This step is must; and should be carried out. 

** To 3 cups of warm milk add in two pinches of saffron and 3 tablespoon of sugar and mix well. The sugar should have completed melted. Leave it aside for the saffron to get infused and leave out its color. Once it is cooled to room temperature, leave it fridge to get chilled. 

** The Kuve pitta will have thickened and settled at the down, while clear water is left on top in two hours of time. Tilt the vessel and slowly drain off all the clear water on top. With the help of a spoon mix the settled kuve pitta evenly. 

** Add in the chilled sweet saffron milk to the kuve pitta and mix well. See to it that there are no lumps and the milk has been well mixed. If you find it too thick, you can add some water or milk too. The coolant is now ready to be served chilled. 

** "Kuve Pitta- Kesari Doodh/ Arrowroot Saffron Milk" is done and ready to be served. Serve this immediately once it has been mixed along with some snacks or as it is to get relished or in case you have a upset tummy too. 

** Note : You must mix the milk well each time you serve as on resting the powder immediately settles at the bottom. In case it settles down, there is no need to worry, just mix well and serve.
