Kirlailele Matki- Piyav- Motte Omelette/ Sprouted Moth Beans- Onion Omelette.


"Kirlailele Matki- Piyav- Motte Omelette/ Sprouted Moth Beans- Onion Omelette" served with tava fried bread slices with homemade ghee, Strong Ginger Tea and ketchup ... Proteins are building blocks for a healthy life and one should consume them on daily basis in any form as they are not stored in the body ... Eggs, Milk, Cheese, Curds, Sprouts etc. are all high in Protiens that can be easily added on into preparing of variety of dishes ... here is a delicious high protein bf. for beginning the day with a bang ... Yummilicious ....  

** Omelettes as I have mentioned before too, is a very fulfilling dish that can be enjoyed during lunch or dinner too, though it is considered an traditional English Breakfast. These are very easy to prepare and being highly nutritious, it’s a great dish that should be given to growing children who are very active all the time. Omelette’s are best served with some brown/ white/ multi grain bread/ Bombay pav as accompaniment. Children simply love them if you serve them with tomato ketchup. Omelet with veggies and with addition of other ingredients are a healthier and lovely combination to be introduced to children who are otherwise reluctant to eat veggies and lentils etc. I have included different combinations of Omelettes before, as my family loves eggs in any form. As I have written plenty about them, I will not write in more here except to mention that this time I just on an hunch prepared them with sprouts and they were soft and fluffy with a crunchy bites of sprouts. Delicious indeed, as you need is a handful of sprouts along with other topping ingredients and you have a high protein breakfast ready. 

** Here is my very own simple method of preparing "Kirlailele Matki- Piyav- Motte Omelette/ Sprouted Moth Beans- Onion Omelette" … My style … 

** Ingredients : 
Fresh Eggs : 2-3 large one’s 
Milk/Doodh : 2 tblsp 
Water/ Uddaka/ Paani : 2 tblsp 
Green Chillies : 5 – 6 cut into thin rings or finely chopped. 
Onion : 2 medium sized Chopped finely. 
Kirlailele Matki /Sprouted Moth Beans : 3-4 tblsp 
Coriander leaves : handful finely chopped. 
Red Chilly Powder/ Mirsange Pitti : a little bit to sprinkle on top of omelettes. 
Salt to taste/ Namak swad anusar
Ghee/Toop : For frying of Omelettes 


** In a porcelain or glassware bowl, break and add in fresh eggs. Add in a little bit of salt, milk, water and beat with an electric egg beater (you can use hand beater too) till it multiplies in quantity. Keep it ready aside. 

** In a bowl add in the finely chopped green chillies, onions, sprouts, pinch of salt and mix well. Keep this ready aside to be added on as topping on the omelette. See to it that that it have been mixed well. 

** Note : Do not add it into the beaten eggs, as if done so when preparing omelettes they settle at the bottom and then the omelette breaks while flipping.

** Heat a nonstick pan or any other regular pan you use to remove Omelettes. I have a different small sized pan which I use only for egg omelettes as I do not like to mix up the tavas. Add in a few drop of ghee/ toop and spread it all round evenly on the pan. 

** Pour in half of the beaten egg mixture into the tava and spread it by tilting or gently with the back of a rounded spatula. Add in a few drop of the melted ghee on the sides. Cover with a lid and cook on medium heat for just one minute. 

** Top the omelette evenly with half of the prepared and kept onion-sprout mixture in a thin layer. Sprinkle some red chilly powder evenly on top of the omelette, cover the pan with a lid and cook till the omelette is done. 

** Note : If you are a newbie and cannot judge if the egg is cooked just by looking, do not despair, just check by touching the top surface with a finger. If the mixture does not stick to the finger, it’s done. 

** Add a few drops of ghee on top of the omelette, loosen from the sides and gently flip it over and cook the top side too without covering the pan on high heat for just a minute or too to get that charred look. Remove the omelette and put it on a serving plate. 

** Proceed the method with remaining egg mixture in similar method as before. Together you will get about 2 semi thick fluffy omelettes of about 8 inches in diameter with the above mixture. I prepare usually with only 2 large sized eggs, you may do so too. 


** "Kirlailele Matki- Piyav- Motte Omelette/ Sprouted Moth Beans- Onion Omelette" is done and ready to be served. Serve it hot with tomato ketchup for added tasty flavor along with a few tava fried slices of bread or Mumbai Pav. Try this out and enjoy with your family and friends. 

** I always serve omelette with tomato ketchup and bread along with kadak adraki chai / strong ginger tea for breakfast specially so if I have to hit the road and be outdoor for the day. This is a very good tummy filling tasty omelette that can be relished for bf, lunch or dinner that will keep hunger at bay for many hours. 

** Note : If you need to prepare more omelettes as the quantity actually depends on the no. of people increase by just multiplying it twice for 4 people as this one is for two people only. Again, as I mentioned above I use only one egg per person, you can add two if desired in which case you need not add milk and water.
