Gulabi Bhaat/ Gulabi MeetHa Chawal/ Rose Flavored Sweet Rice.

** Kesari (Keshar) Bhaat/ Sweet Saffron Rice is a famous sweet rice dish prepared almost all round India though the names differ. A royal dish which stands out on its own, by and large prepared during marriages and other celerbrations. I have already shared the recipe of this the way it is traditionaly prepared by GSB Konkani Saraswat’s for which I will be sharing the link at the bottom of this recipe, do give it a try on any festive ocassion or if you have guests dropping by too. This one is an adaption of the same dish but with rose flavor and I must mention here that it tastes wonderful. I always like preparing our own dishes giving it a twist and somehow they have always tasted good, so much that many of my friends have prepared the same and enjoyed in their own homes. The recipe remains the same, but for the addition of rose crush syrup which is readily available in the stores.

** As it was Valentine’s day, I wanted to prepare something in the colour theme of red and after cracking my brains through night, I came to this conclusion. Do try this one out and enjoy with your family and friends. I will be adding on many more yummier dishes soon, so do keep a keen watch on my blog and yes, do give me feedback if possible. You can also send in if you have request for any konkani dish which might have not been included yet and If I know the method, I will definitely make and effort in preparing and sharing the same. Above all, it is an earnest request to enter you kitchens and try out various dishes posted in Blogs as the sole purpose of the same is to reach out to people round the globe and make them relish them in their homes with family.

** Here is my very own recipe for "Gulabi Bhaat/ Gulabi MeetHa Chawal/ Rose Flavoured Sweet Rice (adaption of Kesari/ Kesar BHaat)" (adaption of Kesari/ Kesar BHaat)" … My Style …

** Ingredients:
Jeera Rice/ Basmati Rice : 1 cup
Sugar/ Shakkar/ Sakkara : ½ cup.
Rose Crush Syrup : ¼ cup (I used store bought)
Cashew Nuts/ Kajjubi/ Kaju : 10-15 halves.
Raisins/ Dry Grapes/ Sukkile Draksha : 12-15
Cloves/ Lavang/ Loung : 6-7
Whole Cardamom/ Ellaichi/ Yellu : 5-6
Red Colour (Optional) : 2 pinches. I have used
Ghee/ Toop : 3-4 tblsp.


** Bring to boil about a liter of water and then add in the washed and drained rice in it along with orange colour and half a tsp of ghee. Let the rice get cooked to 75%. Now remove from fire and drain off all excess water by tilting the vessel. Add in some fresh water mix well and drain off the same, repeat and then put the cooked rice in colander and keep it aside for the excess water to get drained off.

** Now heat the remaining ghee in a thick bottomed kadai, when hot, lower the heat and add in cashew nut pieces and fry them to slightly brown in colour, the add in the raisins mex well till the raisins gets swollen to nice small round balls, do not over fry now for more time as they may then turn brown which will turn it a little bitter in taste. Remove immediately and keep them aside for garnishing later on.

** Crush the cloves a little bit so that it imparts flavour on its addition. Add this into the hot ghee along with cardamom split into two. Now lower the heat and add in ¼ cup of water and then raise the heat to bring it to a boil. Once the water comes to a boil, add in the sugar and mix well. Cook on medium heat till the sugar thickens a little bit, say for 5-7 minutes. You should get the syrup to 1 thread consistency.

** Once the sugar is done, add in the rose syrup and mix well, raise the heat and bring to a boil, lower the heat and add in the cooked rice and mix well. Cook on medium heat for about 2-3 minutes, then lower the heat to minimum and cook covered till done. For the kesar bhaat to be completely done the moisture should have been completely evaporated and the sugar syrup should get coated to each rice grain giving it a glistering shine.

** Lastly garnish with the fried cashews, raisins and mix well. Remove from and keep it aside covered for the flavour to get seeped in and for the kesar bhaat to get cooled down a bit. This dish always tastes best at room temperature and as it cools you will notice that each rice particle will stand out separate, with slightly brittle texture and will glisten out as it gets coated on syrup evenly.

** "Gulabi Bhaat/ Gulabi MeetHa Chawal/ Rose Flavoured Sweet Rice (adaption of Kesari/ Kesar BHaat)" is done and ready to be served. If you have prepared it as an offering for Naivedyam/ Prasadam to God on festive day, do so and then serve it to your family and friends. Otherwise too you can serve it after meal as a dessert as traditionally served by GSB Konkani Saraswat Community. In all the rose flavour infused sweet rice tastes awesome and is sure to be prepared many times in my home. Children who love colorful dishes and sure to enjoy this one.
