Carrot Raita / Gajar ka Raita
When in hurry or when one feels like going light on food ..... this is what comes to your rescue ..... "Carrot Raita / Gajar ka Raita" ..... is a salad with addition of little bit of curds to grated carrots and seasoned for that spice ….. It's tasty, crunchy, colourful, healthy and delicious. This is a also a side dish that matches perfectly with any spicy dish. This raita is very simple to make. It is very refreshing and cools the body during summer. So go ahead and enjoy this Carrot Raita with Roti / Paratha / Dal - Chawal or any other dish of your choice .... or just as it is ...
Peel of the skin, wash and wipe dry about 250 gms of carrots. Grate them on a medium sized grater in a large bowl. Add in 2-3 chopped green chillies and salt to taste. Add about ½ cup of thick well beaten curds and mix well.
For Tempering : Heat 1 tsp oil in a small pan. When hot add 1 tsp of mustard seeds, when they start to splutter add 5-6 curry leaves, 1 tsp of hing powder and fry for a minute. Remove and pour over the Raita.
Mix the Raita well. You can add in more of beaten curds if you like your Raita to be more soft. I kept it minimum, so that the carrots remain crisp. Lastly garnish with a handful of finely chopped coriander leaves. Serve the raita as an accompaniment / side dish with any main dish of your choice. Goes well with roti, dal-chawal, pulav, biryani etc.
