MATTA ............ A Spicy Masala Buttermilk .
Grind a handful of coriander leaves with a little bit of pudina, 2-3 green chillies, 1/3 inch of ginger piece, 2-3 cloves of garlic, 3-4 curry leaves, 1 leaf of ovam (ajvain – Optional). Add this paste to 3 cups of curds. Add salt (Kala Namak) pinch of chaat masala and hing. Add 2 cups of water and churn all together very well. Add more water if necessary.
Heat 1 tsp oil in a small pan add ½ tsp jeera, ½ tsp rai and 2-3 curry leaves and add to the buttermilk. Cover and keep in fridge for 2-3 hours. Strain the Spicy Masala Buttermilk and serve it chilled.
Note: If the buttermilk is not sour you can add in juice of one freshly squeezed lime.
