** I have always mentioned that the secret of making soft roti/ chapatti the flat Indian bread lies in the mixture of ingredients in right proportions/ ratios and kneading it into a soft but firm dough. Practice leads to perfection and it is so in case of these roti’s, I myself am not an expert unlike my friends, the reason being I hardly prepare them on daily basis thereby losing on experience. Rolling of roti evenly plays a very important and so does the cooking technique which needs keeping the tava at right temperature throughout the frying process. Today being Ekadashi, in my home we try avoiding rice items as much as possible for spiritual reasons. In the last decade or so coz. of health issues I always prepared either rava bhakri or Idly which for me was easier than rolling out roti. It is only in the last 6-8 months that I have begun preparing them though not regularly to slowly catch up on the preparation on regular basis. So today tried out this spiced roti for lunch along with other simple dishes for accompaniment.
** Here is a simple method For preparing delicious “Spiced Chapati (Roti/ Indian Flat Bread)" ... My Style .....
** In a large wide stainless steel bowl add in about 3 cups of wheat flour/ atta. To this add in 1 tblsp of oil/ tel (any edible oil will do), 1 tsp red chilly powder (mirchi powder/ mirsange pitti), ¼ tsp of Haldi (turmeric) powder, ¼ tsp of Methi (Fenugreek) Powder, ½ tsp of Dry Ginger Powder (shunti pitti), ½ tsp of Hing (Asafoetida) Powder, salt to taste (namak) and mix well.
** Now add in about 1 to 1.5 cups of warm water and knead to smooth but tight elastic ball. Apply a little bit of oil all over the dough and keep it aside covered for 20-30 minutes. Then once again knead the dough for a few minutes. Divide the dough into large lemon sized portions and roll into into smooth balls and keep them aside.
** Roll the prepared balls dusting them with wheat flour into a round shaped roti/chapati. Do not roll the roti very thin texture but keep it a little bit thick. Also try rolling with just about needed wheat flour for dusting, excess addition will turn out the roti drier on roasting. Roll the roti into a round shape of about 8-10 inches in diameter or as you prefer.
** Heat iron tava/ non stick pan on high, when hot, lower the heat to medium, spread some ghee/ oil on the tava and gently place the rolled chapati/ roti. There should be no creases. Apply ghee/ oil on the top surface and when you will be able to see some bubbles on the top, then flip over and cook the top side too till you get brown spotted on roti.
** Remove and keep the cooked roti/ chapati aside. Repeat the procedure with the remaining prepared dough, by rolling and frying them on tava in similar manner. If you do not want to prepare all the roti's in one go and would like to prepare some later on, put the dough in an air tight container and keep it in the fridge, remains good for a few hours.
** “Spiced Chapati (Roti/ Indian Flat Bread)" is done and ready to be served. Serve them hot with any side dish curry or bhaji of your choice with some curds and pickle as an accompaniment, as it tastes awesome as it is and is very healthy compared to plain roti/ chapatti. I served it with potato bhaji, aamras, dal and soup as accompaniment and it was simply awesome.
